Pop stout for extract

Post by BathTub » Wed Oct 20, 2010 8:32 pm

Hello their, this is the ag recipe -

Batch size ???
5.0 kg Maris Otter Pale *** 3.75kg liquid malt extract or 3kg dried malt extract
1.0 kg British Crystal 55°L
0.5 kg Barley Flaked
0.5 kg Carapils®/Carafoam®
0.5 kg Roasted Barley
0.3 kg English Chocolate Malt
0.25 kg British Black Patent
100.0 g Hallertau (4.5%) - added during boil, boiled 60 min
0.5 tsp Yeast Nutrient (AKA Fermax) - added during boil, boiled 15 min
0.9 tsp Irish Moss - added during boil, boiled 15 min

i know how to convert the Maris otter pale i think, but what about the other grains ?

Also what yeast would you use, and what difference would changing hallertau hops to progress make ?

Do a mini mash with the other grains or simply steep the grains you can steep and forget the rest, which in this case is only the flaked barley which I think will only be there for the sake of head retention.

I should have said in my other post, just about any hops will work in this as long as you get the IBUs roughly in the same ballpark.

Pop originally used Hallertauer which are traditionally a lager hop, this was pointed out but as long as the bitterness is similar, it shouldn't make much, if any difference.

I think I used Northdown. Progress will be fine. Obviously it will depend on the A/A of the hops but roughly 70 - 80g of Progress will do the trick in one 90 minute, start of boil addition

S-04 is a good choice, it leaves slightly more sweetness than say Nottingham, or other higher attenuating yeasts, and is well suited in a big stout like this.
