Murphys stout style recipe
Re: Murphys stout style recipe
Hope I'm not butting in here. I bottle (or keg) when I have two readings that are the same, 24 hours apart. That said, 1013-14 is a little high, aim for 1010 or lower.
I have to say, I have a large amount of LME in stock and I'm going to try this with LME instead. Would be interesting if you want to swap a bottle?

Not butting in at all EB and I agree entirely. With S04 you should be waiting for the 1010 mark. Glad it's tasting good! Using your own hops is even better too.EramusBlack wrote:Hope I'm not butting in here. I bottle (or keg) when I have two readings that are the same, 24 hours apart. OK, I have mind in the FV and 'should' be bottling Friday, I'll keep you posted.
Only difference that I have (other than using LME) is I used Fuggles to hop and not Progress. I understand Progress is train that was developed to replace fuggles.

Good stuff! Keep updating here.
Re: Murphys stout style recipe
I bought my hop rizzone from aplus hops, info on -
(Progerss was developed at Wye College and released for
commercial production in 1964. Progress. Generally grown as a
substitute for fuggle in areas hit by wilt, it has many of the same
qualities but in essence has a slightly sweeter sometimes lime fruit
character which creates a softer bitterness. Excellent for pale ales,
lighter bitters, wheat beers and porters. It has been used in Hop
Back's Thunderstorm; Wood Brewery's Hopping Mad the hop)
I thought i'd better start using what i've been growing !!!!
I have two fv with about 11l in each, i'v bottled half and will do the second half tomorrow.

Thinking about changing the recipe slightly for the next time i do it -
This is what i did last time
2.1 kg Dry Light malt extract
400 g Roasted Barley
80 g Chocolate Malt
400 g Barley Flaked
100 g Torrified Wheat
60.0 g Progress (6.3%)
safale -04 yeast
Maybe add some carapils or crystal malt ? to add a toffee/sweeter taste?
Any ideas Gentleman

Sounds lovely! Aye, it should reach 1010 before you bottle. Perhaps you could put it somewhere warmer? Also, might be an idea to rouse the yeast.

Re: Murphys stout style recipe
Hi BT - Sounds like a nice pint! I'd love to grow my own hops, but just don't have the room. Just wondered how many brews do you get off one plant and do the plants get stronger and grow back more each year?BathTub wrote:Thinking about changing the recipe slightly for the next time i do it -

In my Murphys stout I use 300g Roast barley, 200g Chocolate malt and 150g Crystal. I use Target and then 10g Goldings 20 min from the end of the boil. I've never used Progress, but it sounds nice. I love fuggles, so I might give it a try.
WRT tweaking your recipe; try adding 100-200g crystal and I'd recommend some goldings late in the boil for a bit extra hop flavour.
Hope this helps.

Re: Murphys stout style recipe
To be honest TLS growing hops has been easy, this is the second season they have been growing and the crop this year was 345 grams. It takes two - three years for the plant to get really going. At the end of each crop just cut the bines back to ground level, they come back every year.
Re: Murphys stout style recipe
And I was going to post you a bottle to compare, BT, but a number of things came up, with me using fuggles as well as LME, seemed a pointless exercise, but SWMBO brought me another keg as this was just ready to be bottled!
So I got a little carried away ...
I then had some mates over and the Summer Lightening I had made, wasn't to everyone's taste; so although it had been in the keg about a week, they started on this with much appreciation. I had to restrain them, when the keg starting pulling in air.
I've also altered the recipe and used Progress now.
