I don't know that I have a recipe for a Christmas beer per se but I always think of really strong stuff around the holidays for a couple of reasons. First of all, as noted above, relatives stop by and God knows, you don't what to have to deal with that completely sober. Secondly, I seem to always spend money like water which stresses me out so I need a restorative to handle that also. Anyway, for Christmas I always think of the strong Belgian ales (and they have a spiritual tie in also) as well at Scotch Wee Heavy, Barley Wine and from the lager side of the house Double Bock.
Drinking:Saison (in bottles), Belgian Dubbel (in bottles), Oud Bruin (in bottles), Olde Ale (in bottles),
Abbey Triple (in bottles), Munich Helles, Best Bitter (TT Landlord clone), English IPA
Conditioning: Traditional bock bier, CAP
Fermenting: Munich Dunkel
Next up: Bitter (London Pride like), ESB
So many beers to make, so little time (and cold storage space)

I like the idea of strong beer to cope with relatives

I tend to want a strong dark hoppy ale for supping and for some reason I also tend to favour hefe weiss beers around Christmas - perhaps its the clove aspect?

Well it's in the fermenter but not quite as initially planned......................

I decided at the last moment to push it over into Porter territory and took the chocolate malt up to 250g and added 100g of black malt.

I managed 27ltrs at 1.055 which will do for me and the fermenter is going crazy with 2 inches of krausen within 5 hours of pitching =D>
