ok, so after a series of hoppy beers, i fancy something a bit more malty. So here's an attempt at a strong-ish mild/brown ale. Although i like mild (when i can find it), i've never brewed one before. I don't have a specific beer that i'm trying to replicate, but i'm open to suggestions on how to improve it
target vol: 23l
malt:
5300g pale malt
400g crystal
50g chocolate
100g torrified wheat
hops:
20g cascade/20g willamette: 75min
10g cascade/10g willamette/10g fuggles: 20min
10g cascade/10g willamette/10g fuggles: 10min
IBU: 27
Colour: 43
Yeast: Safale s05
will be mashing once the kids are out of the house tomorrow morning...

I wouldn't use cascade or willamette at all, and I'd probably drop all the late additions and go for a single addition of fuggles at the start. As is, it's got quite an American twang, and is probably a bit more like an American Brown ale than a British mild.

yeah, i was expecting that, and couldn't decide whether it would work or not. having had brooklyn brown, i'd be quite happy to end up with something like that. ideally i'd split the wort in two and do one with fuggles and one with american hops and see which i prefer, but i don't have time. sorry - should have made my initial post clearer - not necessarily after a mild, just more a beer where the balance is more in favour of the malt than the hops.

Whatever combination you fancy do't late hop. If you want to have fun with milds get some mild malt and try a light mild, hopping still restrained but you have more scope to play

@raiderman: next time i'll make sure i've thought it through beforehand and ordered in advance. Tomorrow is the best chance for a brewday i'm gonna have for a while, so i'm going to grab the opportunity and use what i still have in stock (pretty much what you see in this recipe, plus some wheat malt, which i don't think belongs here). So you're saying just go for bittering hops and ditch all the rest? Would make my brewday less hassle
