Thanks Trunky, i think the pears never ripen on these trees, they started falling off about a month ago still rock hard, some of them were stored for at least 3 weeks before i pressed them but they were still solid. It's very interesting about the keeving i found this link http://www.cider.org.uk/keeving.html and can confirm that is exactly what it is doing. Before i read your reply i pushed the sediment back down into the Dj and it re settled in the bottom but i can see it is already starting to form in the top again. So i take it that the best thing to do is to try to rack it off at some point?

i spotted an apple tree near work and gathered two brew buckets full and about the same amount of pears from a neighbours tree havnt a clue what variety either are.
pulped with a fence post and one of them paint stirers you attach to an electric drill.
pressed in a plastic tub with some net curtain and bits of shelf i had lying about using a scissor jack and the shed roof.
i was supprised to get 5 gallon of juice with such a crude. press i took photos but dont know how to upload em.
any way i stuck half a dozen campdens in left 24 hours and added champagne yeast.
so when should i rack?
when should i bottle?
when should i drink?
