I have just over 20g of Simcoe left and rather than leave it languishing alone in the freezer until fresh supplies come in i thought i would use it up and just had a play with beer engine and came up with this recipe, i have loads of Chinook which i have never used and plenty of Amarillo so your thoughts please would be most welcome before i weigh it all out for an early start in the morning ,please bear in mind its only a 17Litre run :)
PS the name comes from my Nemisis and least favourite .gov

Fermentable Colour lb: oz Grams Ratio
Pale Malt 5 EBC 7 lbs. 11.4 oz 3500 grams 84.3%
Munich Malt 20 EBC 1 lbs. 1.6 oz 500 grams 12%
Wheat Malt 3.5 EBC 0 lbs. 5.3 oz 150 grams 3.6%

Chinook Whole 11.5 % 90 mins 0 lbs. 0.4 oz 10 grams 10.5%

That recipe screams for US-05 over S-04 if you have the chance.

More at flame out, less at 15 would be my 2p but your mileage may vary... otherwise, love your grain bill.

I like it as it stands, but agree the yeast may be better changed to US 05 or Nottingham

Thanks chaps the mash is on and your both right about the yeast unfortunatly i have only s04 and a wheat beer yeast in stock at the moment so its going to have to be the so4 i'm afraid. I have rejigged the hop schedule slightly dropped 10g of Amarillo at 15mins and added to the flame out steep along with 10g of Chinook so as i haven't weighed them out yet it will be a spur of the moment thing as to which option i go for unless any kind soul comes up with anything else in the meantime :)

oops memo to self, check hops before devising recipe NO SIMCOE :oops: thought the hop hamster had been in the freezer then realised i had used more than i thought in a apa sooo its either all Amarillo and Chinook or a late addition of Cascade with the original recipe as a replacement for the Simcoe ???

Paul, I would replace the simcoe with amarillo (I do like amarillo) If you are really desperate and don't want to use the SO4. I have a US 05 if you want to shoot over for it :wink:
