This evening i will be brewing a RIS for the first time. All being well it will need about 12 months conditioning.
I am also hoping to make a smaller beer after with the rest of the goodies in the malt after "Taz" is in the boiler.
Here is the tale of the tape.
BREWLENGTH 15 l Boil length 20 L
5200,00 gm Pale Malt (2 Row) UK (5,9 EBC)Grain 65,57 %
1000,00 gm Barley, Flaked (3,3 EBC) Grain 12,61 %
320,00 gm Carafa III (1034,3 EBC) Grain 4,04 %
375,00 gm Wheat Malt, Bel (3,9 EBC) Grain 4,73 %
245,00 gm Roasted Barley (591,0 EBC) Grain 3,09 %
300,00 gm Amber Malt (43,3 EBC) Grain 3,78 %
310,00 gm Caramel/Crystal Malt -120L (236,4 EBC) Grain 3,91 %
120,00 gm Chocolate Malt (689,5 EBC) Grain 1,51 %
60,00 gm Black (Patent) Malt (985,0 EBC) Grain 0,76 %
HOPS
50,00 gm Target [12,97 %] (60 min) (First Wort Hop) Hops 74,2 IBU
30,00 gm Northdown [8,70 %] (15 min) Hops 13,5 IBU
1 Pkgs London Ale (Wyeast Labs #1028) Yeast-Ale
I am wondering if this is too little of the roasted malts, (14% of grist). Does anyone have an opinion on this?I am basing this on 65 % efficiency due to the strength etc and will be only having one batch for the sparge.
From whats left i am hoping to run 2 more batches of 10-11 l each and see what i get as an Og. needs be i'll bump this up with dark DME in order to make a respectable post boil OG.
As for hpping on the smaller batch, i will basically make this up as i go along.
Pics to follow later this evening hopefully:)

Giving the predicted OG might help, to save putting all the ingredients into beerengine
I think it wise that you got for a minimum of 70-75% Pale Malt you could easily knock 5% off your Flaked Barley and sub it with Pale, you might find that 15% Dark Malts makes for a very very DARK beer and you might be able to scale them back to 10% or lower and still get a very black stout. What is your predicted EBC ? I'm not sure I class Amber as a Dark malt.

Est Original Gravity: 1,099 OG
Est Final Gravity: 1,023
Estimated Alcohol by Vol: 10,01 %
Bitterness: 87,6 IBU
Est Color: 114,7 EBC
Might just whack in a little more pale to make 70% That means another 1000g but what the hell:). I'll get another beer out of it too so it will not go to waste:)
Not worried about it being dark though the last one was pitch black and was just fantastic. this is a RIS so i hope it is a cracker, full of taste and relatively high alcohol volumes for the cold winter nights next year:)

When I make another Imperial Stout, I'm going to make an almost sensible Mash but then add sugars to the boil to give it the alcohol boost. just so i don't have to feck about with extra sparges or reduced mash efficiency
I think Aleman's RIS recipes are a fair starting point.

Yes. I have a bit oalt that has been laying around for a while that i want to get rid of. I am also using this " party gyle" type thing as a trial for next brew day in january where i am doing an american barley wine and something smaller.pdtnc wrote:When I make another Imperial Stout, I'm going to make an almost sensible Mash but then add sugars to the boil to give it the alcohol boost. just so i don't have to feck about with extra sparges or reduced mash efficiency

some pics to follow over the weekend. Taz ended up with an og of 1099. The other around 1045. Think the small one is i little tasteless. Over sparged.nothing to do about that. Will let t ferment them decide whether to keep or throw. Think i might have pitched at too high a temperature though. Hopefully signs of life tomorrow:)

It's been totally hectic at work so no pics til the morning. None the less the ris ended up at 1099. It took an age to start fermenting and in the end i chucked a couple of packs of notty in it. Fermentation started and was ok although not as violent as i would have expected.
Checked last night and it was down to 1042, so around 7.4 at the moment. I opened the fv today, foam headics home, little action in the airlock, will be leaving this and check again on thursday evening. I an offshore for a week from Friday, so if there is little change in the gravity i'll bung some more notty in it.
The small beer was around 1048, i hopped just with northdown at 60 and 15. Tasted yesterday was really very disappointing. Bitterness, but no roasted taste. Could be a drain job. Decided to chuck a load of cascade in for the next 7 days. It can't make it any less bland in any case. Pic updates tomorrow:-)
