Brew a bit sweet

Post by MacDuck » Fri Nov 12, 2010 7:04 pm

Hello All

I am brewing a bitter - Dave Lines's Fullers clone in fact.

Thing is my hops is about 2 years out of date and therefore does not seem to have added much bittering to the brew.

Gravity is now around 1018 so not far to go still but it is fairly sweet.

Is there any way to make it more bitter at this point?

Cheers

At 1018 it has some way to ferment yet and the sweetness you are tasting is probably just the residual unfermented sugar in the brew. If it's stuck at 1018 perhaps consider giving it a gentle rouse and warming it up a little?

Tell us in three weeks again when it's bottled and carbed up how it tastes. Beers often taste too sweet or cidery at this early stage, mainly because they are not ready yet.
