something with columbus. . Help please
hi all. Not been around much of late. Too much work and not enough time:-)
Either way, the first brew for 2011 is planned as a landlord clone. For the second i would like to use some 16% columbus i have. Anyone tip me a recipe. Something around 4.5-5%.

A hoppy American pale ale with Columbus only? 1050 with 30-35IBU bitterness, lots of late hops, US05/WLP001/Nottingham.
Perhaps something like: 90% Lager malt, 10% Munich; 20IBU from a bittering addition at 90min , and another 10IBU from late additions (15m and 5min equal additions say - fiddle around). Then a good ounce at 0min, and an ounce to dry hop with?

You could go for the all-late additioons approach or some first wort hopping and then all late - this seems to give the big aroma/flavour witout going too bitter.
I did evil twin with centennial and amarillo- 5g FWH then all the rest in in last 20 minutes of boil. A friend did a Columbus AIPA with only 15 min, 5 min and knockout/steeping additions and it's great - single malt MO and single hop columbus.

Why have you got the aroma/steep hops going in with 20min of the boil left? They go in after the boil - other than that, it looks OK. I'd mash high-ish by the way - 68C would be my mash temp for this to keep a bit of body in the beer to balance the hops.

i could always add some carapils to the mix for increased body. Don't want to use crystal as i don't have any light stuff at the moment and would like to keep the colour down on this one.

Strange way of working (but I guess it's reporting 0IBU, so must be right!). Carapils will work fine (it's just a very light crystal malt anyhow) - if you have any munich or vienna, it would probably work OK too (more malty).

Looks good - I'd first wort hop the 60 minute addition rather than waiting for it to hit boiling - seems to help on increasing flavour but decreasing harsh bitterness which seems a good idea for these catty high alpha US hops...
ANd yeah a 0 minute or 80c steep for final addition - should be a good 'un - a little pale crystal or malty vienna/munich wouldn't hurt too

Also would the 05 be ok or should i go with something else like nottingham or plain old reliable S-04?

US-05 is the american one so I'd go with that else nottingham - Saf 04 has a more english ale flavour profile...

Columbus is another one of the American hops that can be fruity. (more info http://www.brew365.com/hops_columbus.php ) Currently I like to use it with a combination of other hops in my American IPAs (Centennial, Cascade, Citra, etc)Deebee wrote: The ounce of hops for steep should be ok?

US05 (Chico yeast strain) is the standard over here for American IPAs. High attenuation with a clean flavor profile.
