60 MIN IPA?
Not so much of a recipe more of an opportunity to gather some advice.
I like the idea of doing a "continually adding hops" IPA.
Has anybody done this method of hopping before?
What were the results and would you do it again?
I've got loads of the American "C" hops for the experiment so it wouldn't be a true 60 min clone but somewhere near.

Yup, I have a clone of Dogfish Head 60 minute clone on tap right now. I really like the beer and have now made it three times, the last with the Ringwood yeast. Although you can make a continous hopping machine, I just add hops every 5 minutes, it gets the job done. The reason I really like the beer is that the hops employed (Warrior, Simcoe and Amarillo) seem to give a really smooth hop bitterness, unlike other high alpha hops you can use. Additionally, the beer is fairly dry as there is no crystal malt in the recipe I use so it attenuates pretty well. Because the beer is hop bursted, you get really good aroma and flavor but the bitterness is not really over the top like some IPA's you get on this side of the pond.
It is interesting however to compare a beer like Dogfish Head 60 with some of the older IPA's on the market like Harpoon for instance, or even Samuel Smith's IPA. Compared to those two beers (both of which are really fine beers by the way) Dogfish Head 60 is pretty bitter and hoppy. I put last years batch in a major contest last year and basicly was told that the beer was not nearly bitter enough. I would hate to see what they considered bitter in the Imperial IPA flights, it seems there is an arms race going on with bitter beer, pretty soon we will just chew on hop cones and dispense with the liquid altogether. Of couse for this years contest, I made the same beer and bumped up the bitterness just a little, what can I say?

Oh yeah, you can find recipes for the 90 as well as the 120 versions. I personally prefer the 60 Minute for a couple of reasons. First of all, the other two versions tend to be pretty alcholic (and 60 is bad enough as it comes in around 6%). Also, to my taste anyway, double or imperial IPA's are hideously bitter to the point that I really don't enjoy the beer. Although, if there is enough malt backbone, even a very bitter beer can be quite good (for instance I like Double Bastard much more that Arogant Bastard, I think the latter is just harsh with no balance at all). Oh well, to each his own, I am really not that much of a hophead although I can feel myself sliding into the abyss all the time.

I did a similar hopping schedule with Bobek, 9-10g every 5 minutes... Only thing was I forgot to adjust the Alpha of the hops and didn't end up with an IPA, it was more of a VERY full flavoured Bobek brew, took a couple of months to settle down but was pretty good after a longer maturation.

I've done extensive testing on the DFH 60/90/120 (in the name of pure science of course) and I can conclusively say that I prefer the 60 overall. Just done the brew now.
If you want a quiet ,easy brew day then don't do the continuous hopping.
Had three different timers running.
Need to lie down for a rest now.
Oh and i forgot the whirlfloc tablet until the last 5 mins

I can't really see the point in this, if you want a big hop hit just dump a big wadge of hops in at the end of the boil.
