Shit, 1004 even when mashing at 70c? Beginning to think this mash temp thing is a pile of s**t. It certainly seems to be with the Safale brand anyway. Mashed at 73c with S04 a while back and it still finished at its usual 1010 - so no difference to 66c.

Opened and drank this 5 gallons Sat afternoon with some quaffing mates
They named it Nearly but not quite. I think they were spot on, great beer but didn't quite hang on with that hoppy aftertaste as the real one.
Will brew this again, but next up a Nelson Sauvin single i think with some in yer face citrussy grapefruit. Anyone done one yet.

Awesome thread lads, this is next up on my brew list.
Quick (probably dumb) question, after the burn out hop addition, you stir well and leave them for about 20mins for the oils to come out before cooling with imersion chiller?
Then do you filter out all the hops before putting in the fermenter and adding the yeast? Or do you leave any in? (i'm guessing not)
Perfecting dry hopping is something i'm yet to achive. The above what i've had best results with so far.

Add at 80c and stir gently every 5 mins for 30 mins.

Have you tried their mild Over the Moon? I had in yesterday and it was superb, one of the best beers i've had in ages, lovely caramel.
I was chatting to one of the lovibonds brewers in a bar later in the day, he also liked it, but said that it was just Hophead with Brewers caramel added!!!? He swore blind on it.
Doing a this Hophead clone next weekend, but am now tempted to add a twist to it by adding some more crystal or even Mild malt to it..
what do you reckon?

Go for it man. I've had success with crystal in the past with Cascade. My plan is to do a ruby IPA using Munich malt. Have had pints like this recently down here in Brighton and they were superb. I'll up everything else though as I want loads of malt flavour.

I love Dark Star beers especially at The Evening Star pub which I always try to pop in when I go to Brighton.
The Evening Star beers and this post inspired me to to 2 versions of this beer.
The first based on SiHoltye's recipe using Cascade. Proper job, lovely.
I also did a version recently using Amarillo as a replacement hop. Also lovely. In fact drinking it as I type....
This brew really punches above its weight.

I love The Evening Star. My fav pub in the world! Have you ever mixed Bobek with Cascade? Have this on the go at the minute:

HIi all,was doing a brew tommorrw and came across this,(love cascade)only thing i have no caramalt,would crystal or amber be a good substitute or will it ruin it.

Just seeing this John. It came out superb. Have the ingredients ready for another... apart from the caramalt as I forgot to order it. Doh! Was supposed to brew it on Saturday then realised my error. Brewed Honey and Elderflower ale instead and will order the caramalt this week. Hope to get it brewed over the next few weeks.

I personally wouldn't brew this without Caramalt but that's just me. Caramalt gives a wonderful clean caramel flavour where Crystal can be slightly cloying - not suited to this style. I borrowed your idea and brewed a 'Spring Ale' with Honey and Elderflower (~140g florets) last month.
In samples from the keg, elderflower flavour very intense at the moment, (hoping it will calm down a bit), but still think it will be a refreshing pint in a few weeks. Its slow in clearing so I may pop it in a fermenting fridge (when one's empty) at 12C,to help it clear and so its served coolish
I tried this Hophead recipe last year and it was lovely, so much so that I did a 2nd version with Cascade & Amarillo. Neither lasted very long.
