The plan for next weekend

"2 Shades of Stout"

Brew method:
25litres
Mash 66c-90minutes single infusion mash
boil time 90minutes
OG1048
FG1013

Fermentables:
Pale malt 4,760gm
Choc malt 280gm
Black malt 135gm
Flaked oats 335gm

Hops:
Challenger 25gm
Fuggle 45gm
30EBC

VERSION ONE:
Pirate Bay Rum & coconut Stout - 12.0l OG 1048 (FG 1.013, ABV 4.8%)

ADDITIONS
100gm Shredded coconut, toasted (in secondary)
"Spread coconut out in an ungreased shallow baking pan and toast, uncovered, stirring often, 30 to 40 minutes at 300 degrees F. until golden."

375ml of RUM (bottling time)

YEAST:
WLP001

VERSION TWO:
chocolate orange and vanilla stout - 12.0l OG 1048 (FG 1.013, ABV 4.8%)

ADDITIONS
Vanilla Extract 35 g In Fermenter

Cocoa powder (maybe need some help on the chocolate anyone?)

Orange Peel, Bitter 35 g In Fermenter

YEAST:

Interested to hear how this works out, they both look interesting!

One thing i'd be concerned about is the oil from the coconuts (coconuts are about 50% oil) affecting head retention. I'd probably be tempted to use coconut flavouring.

Instead of the coconut solids, and the rum, can't you use coconut rum? Reason I ask is that Cap't Morgan does a Parrot bay coconut rum, and the "Pirate Bay" reminded me.
Needs more Cowbell.

Haven't made my mind up about the best way to go on the coconut, may split the 12l at secondary and use coconut flavouring in one and or coconut rum/Shredded coconut in the other.
