Malolactic fermentation is not a fermentation in the true sense of the word but since it evolves C02 it has been traditionally called a fermentation. Basically Lactobacilli rather than yeasts convert malic acid to lactic acid and evolve C02. Since lactic acid has one less proton to donate it is less acidic than malic acid. For years the benefit that Lactobacilli could possibly get from undertaking this process baffled since there was no net energy gain from the conversion but very recently it was revealed that since a higher concentration lactic acid would be inside the cell membrane than in the surrounding liquid the pH gradient could act as a "battery"... very cool. Life finds a way! :D

A bit of a side track there but since you made your cider from desserts (high acid compared to cider apples) a malolactic fermentation is very advisable - lactic acid is also a mellower acid in the mouth. Think of the acidic sensation unsweetened yoghurt or homemade sauerkraut. Don't add any more S02 until you are satisfied with the acidic balance - lactobacilli are very S02 sensitive.

Fingers crossed, I think I may have scored a disused orchard with about 100 trees for free picking. Last year some friends overwintered their guinea pigs on the apples from one of their parents trees. This year I will try and put them to a much better use. :D

Maybe. The orchard is, I think, just a patch that the parents of some friends from the kids school have. I'm told it has 4 or 5 rows of trees of different varieties and goes on for 20 or so columns ish!!!!!!

The owners just let the fruit go to rot and ruin on the floor these days and have no use for it.
Early days yet, but I've got plenty of time to sort out the details and we get on really well. The friends have a daffodil bulb business and they've even offered to help out with a tractor and wooden crates to gather the apples in.

I might have to get in touch with your mate, Cider Trev. I now know someone else who knows him too, but I haven't tried his cider yet!!!!

Should the 2011 thread start at harvest time or not??? some guys will still want to talk about the 2010 harvest.

gentlemen, we need to agree on 2010 - 2011 dates here!

I propose that anything associated with 2010 harvest, including growing, picking, pressing, fermenting, storing, drinking and prospective harvests belong here. Anything to do with this years (2011) harvest including the above and the result of any prospective harvests belong in a new thread (which I am going to leave for trunky to honorably start)
