Afternoon all,

It's been ages since I've made any beer, but after drinking some Brewdog 5am Saint on Friday night on cask and thoroughly enjoying it, plus with me having most of today free, I've decided to get a beer going! So the inspiration behind this beer is obviously 5am Saint, but this is going to be like 5am Saint on turbochargers. :twisted: I'm after a good strong, complex ale that will last nicely in the bottle over the summer.

Here's the recipe:

25 litre brewlength

5936g pale malt
269g crystal malt
202g extra dark crystal malt
202g munich malt
134g caramalt

47g cascade - 60 min boil (FWH)
100g simcoe - 10 min boil

2 x packets nottingham yeast (to get the attenuation)

Est. OG: 1065
Est. FG: 1012
Est. abv: 6.8%

Sounds good. Hope it turns out well for you. I had the 5am Saint on keg at the SIBA festival in Nottingham recently - and a glorious half-pint it was too. I'm not a fan of all of BrewDog's beers, but that was a definite winner. If you come even close to it with your recipe you'll have a fabulous drink on your hands.

Cheers. :) Well, as far as I'm concerned, it should turn out to be a good beer even if it isn't close to the original! Oodles of nice hops and a decent grain bill should make for a tasty beer either way.

As 5am saint is aroma driven ,you need to get a shed load of steep and dry hops in there.The simcoe will give the piney edge but you need to get more citrus hops in at the end.
From Brewdogs website
ABV: 5%
OG:1048
IBU’s: 25
Malts: Maris Otter, Caramalt, Munich Malt, Crystal and dark crystal malts
Hops: Nelson Sauvin, Amarillo / Dry Hops: Simcoe, cascade, centennial. ahtanum, Nelson Sauvin
Twist: Loads of late hops and bucket-loads of dry hops

The trouble with these aroma led beers is that after a few weeks in a bottle the aroma starts to fade

Great video! Really enjoyed watching it. I always crush my Campden tabs. Didn't know they were easily dissolved. Cheers for the tip. ;-)

I do tend to crush campdens a bit with the back of a spoon - they dissolve in about 5 minutes uncrushed, though, hence why I always do the tablet a good 10 minutes before the water is up to temp.

The aromas coming out of the FV are fantastic! I'll probably sneak a taste . . . I mean, of course, an assessment, of the beer this evening to see how it's coming on. Gravity test tomorrow methinks.

I see US-05 is doing its usual trick of extreme attenuation - the beer is down to 1009 now! :shock: That works out at 86% attenuation if I have my calculations right (OG of 1065)! I'll test it again tomorrow to see where it's at and if stable, bottle it then. Strange that the gravity is that low given the crystal malt in there, though.
