Hi

Don't be put off your NOG just yet!

I bottled all of mine and didn't really like it much at all to start with, but I had a bottle (7 weeks old) last week and it was like a different beer.

The beer has lost it's heavyness now, and has an almost sweet initial taste that changes to a mildly bitter dry finish.

Whereas at 4 weeks old I struggled my way through a 284ml tester bottle, I now gulped my way through a 500ml bottle and was left wanting more :)

It is certainly a slow burner compared to a Wherry, but as usual with brewing, patience is rewarded =D>

Just do what I've done, keep brewing and bottling for a few months, and then you will always have something ready to drink.

And I find that when I've got something fermenting, I tend to concentrate on that instead of what's conditioning

Hi, I have brewed Admirals Reserve, Nelsons Revenge and Wherry, which I am drinking now, all benefit by a 6 week conditioning time if you can hold out that long. I always ferment for 14 days regardless of gravity reading - I find that the yeast has enough time to digest all of the nasties prior to bottling or in my case casking in 10L polypins. The wherry by the way is as good as any ale served in a pub that serves good real ale now thats gotto be soething to talk about! Give it time and you will be rewarded.

cheers all gona try to last out to 8 weeks  before i sample again. As im only new to homebrew i think i was spoilt by how good the wherry was in a relatively quick time,4 weeks cold conditioning
As good as most pub bought real ale
seems to me from reading here the darker the beer(fav type) the longer conditioning is required DOH!! not looking to smiley with my impatience!
