ive got the wine that Gordonmull suggested on the go right now and its stated fermenting. ive been reading a bit about wine and most articles ive read tend to say i need to degas the wine before bottling but everyone seems to have a different opinion on it. is it necessary? and if it is what is the best method? cheers, ste

Degassing is (probably) necessary. I always degas now by shaking for 20-30 seconds several times a day for 3-5 days (4.5l demijohn). I never used to bother, but occasionally got a "sparkling" bottle of wine. I believe that it is possible to get broken wine bottles

When you first shake it you'll soon notice all the gas! Let it out veeeery gently or SWMBO will be most upset! (so will you come to think of it!)
Eventually it calms down. I normally go until there is only a whisper when i take my finger off the grommit. Used to do it until it emitted nothing at all but i think that's a bit OTT.
I start degassing after my first rack, when the fermentation has stopped and the wine is beginning to clear. Helps to dissolve that first campden tab as well.

that part where he says now taste it you know you want to, i did and decided that id havea go at doing 5 gallons of it. No usre how im going to rack it as i put a cider kit on on my other 5 gallon fermenter!

drinking this now, cheated a little bit, fermented it out, racked it, added finings, and bottled it.
Its nice, really nice, for the price of what i have made here, its unreal. Much nicer than the cheap wine kit s i have made in the past, and not far off as good as the beaverdale i usually drink. Its very young now, i like drinking wine when its young, tastes better to me, so i dont know what itll be like when it ages. Only have 4 bottles so far, and as i say i have the 5 gallons of it ont he go now too.

Maybe add an elderflower leaf in each bottle?

Good stuff though, isn't it?!
I've just started a hawthorn flower on some archaic recipe and I'm sorely wishing I'd just based it on this one now. Way less hassle. I'm definitely basing elderflower round this one in a few weeks. Planning pulp fermenting on the flowers with the wine ingredients, straining at 1010 to a demijohn and then doing a late addition of a handful of flowers, after advice taken today on WAH due to my hawthorn disaster.
Plenty other things to add in too I'd have thought - dandelion, strawberry, raspberry, rose flower. Keep an eye out on the ends of the supermarket fruit and veg area for reduced stock. As long as it's not mouldy and rotten it'll be fine.
Actually did a pulp fruit version of this recently with 5lb grapes and three golden delicous going cheap from the local fruit stall. Added to that were a couple of braeburns and a bramley that had been lurking in the fridge since SWMBO bought them intending to eat or drink them or whatever you do with fruit when you don't ferment it. Cost me about 6 quid for the gallon all in, counting chemicals and yeast.
Speaking of which, she's done the same recently with some kiwis, a tin of mandarins, apples and grapes. If she doesn't make fruit salad soon...
Anyway. I'm rambling. It's not my fault, its the TC.
Another good reason to make this wine that I've just realised is it's a cheap, easy to make, top up for after racking. I was thinking bottling to 330ml crown caps, using one to top up and then, well, the rest of the bottle would just have to be disposed of in the appropriate manner!
Like you say, the quality of the booze compared to the cheapness is awesome. I'd certainly have a 5gal batch on the go if I had the fermenters but my only 25 gals with airlocks are currently holding the wine I'm making for my mates wedding reception. (Yup - he is an absolute cheapskate!!!)
If you like that one though, try the second one on the same page. Definitely my favourite of the two. Takes a week or 2 to lose it's edge but after that it's brilliant. Fruity, medium to dry rose, without the bubblegum nastiness of commercial roses and perfect for the weather we've been having. Couldn't get blueberry juice so mine was done with cranberry instead.

So, if i want to make a wine i should base it about the grape and apple juice wine and account for suger content of things i add too?
I have also started the red wine abut 1 week you say about too , i like red but find it heavy, so im hoping this will be quite drinkable for me

Depends on what you want really. in theory you could just ferment anything in syrup and get the flavour but it may lack body. I'd certainly use the white wine recipe to base flower wines around now but once the fruit starts coming out to play (in my fv) I will probably ferment on the pulp or shell out for a half decent juicer. But, yeah, you could probably base anything you wanted around it.
You won't be disappointed by the "red". It comes out a lovely dark rose, really fruity and refreshing. Not heavy at all. Hope you've got a spare 5 gal fv handy!!

just bottled this now, it came out like a rose, and its light and its really really drinkable, i may have used different red grape and apple juices than you. Really chuffed with that and may do a big brew of it!

Glad to hear it's turned out good. If it's anything like mine was you won't make a gallon last long!
I've kind of had the kybosh put on brewing at the moment due to an impending house move but as soon as i get back to Scotland there's 6gal of rose and 6gal of white going on.

i think ill have to try making this in bulk. im making a one gallon now but that will be gone in my house in the best part of a day. just seems to make more sense to make more of it so i can have more than six bottles knocking about at one time. also at what point is this recipe supposed to stat to clear? ive never made wine before so im curious. ive had it in primary for 2 weeks now and it just seems to be just about starting to clear ever so slightly from the top down. is this correct? just thought the fermentation seemed really slow on this one, but then all i have to compare it to is beer kits. was planning to rack a good few times to remove the majority of the yeast so should be clear enough but just looking for some pointers on when to do my first rack???

For the white, two weeks is what 3 of mine took. Another took 3 weeks and yet another with champagne yeast took over 4 weeks. For the two roses that I've done it was two weeks with youngs high alcohol yeast and 3 weeks with youngs red wine yeast.
That was until fermentation finished. I found it took over a month to clear without the use of finings, but I wished I'd left it 2 because it did chuck a very fine sediment in the bottles.

ive done 2 racks now and its still clearing. only about halfway down. as i was siphoning i got a bit in my mouth from sucking the tube and it tasted really nice, much nicer than it tasted about 5 days ago when i did my first rack. i still cant believe how cheap this brew is, considering putting a decent beer kit on cost the best part of £20. got another on the go now whilst this one is clearing, followed the recipe to a tea but instead of doing grape and apple ive used just 2 liters of apple juice. looks really nice, kinda like champagne when i had just put it on. cant wait to see what it will turn out like
