Pale Imitation (Harveys Sussex Best)

Brewed this yesterday.

An enjoyable brew day with only a couple of cock ups, I left the tap open on my cleaning bucket (kitchen floor needed a wash anyway) and would you believe it, I took OG and temp readings just before pitching and promptly forgot them. Everything was in the right ball park so I’m not too bothered.
First batch sparge collected 16.5 litres @ 1.054 and second batch sparge collected 17 litres @ 1.017 and ended up with dead on 25 litres after 90 minute boil.
Not sure how it’ll turn out using S-04, have to wait and see and possibly change for a liquid yeast next time round.
Sussex should be ABV 4% but I’ve nudged it up two points.

Brew length - 25 litres
OG - 1.043
FG - 1.010
ABV - 4.2%
40 EBU
24 EBC
90 min mash
90 min boil
Yeast - Safale S-04

4000g Pale Malt
300g Crystal Malt
166g Flaked Maize
18g Black Malt (colour adjustment)

Progress - 20 EBU @ 90 mins
Golding - 8 EBU @ 20 mins
Bramling Cross 8 EBU @ 20 mins
Golding - 2 EBU @ 10 mins
Progress - 2 EBU @ 10 mins
Golding - 10g 6.8% Alpha flame out steep

Sorry, I didn’t get to take photos during the brewing so you’ll have to make do with a couple of sample jar shots…
