Extract Imperial Stout

Coopers Stout is one of my favourite kits, and I read a recipe on their website recently for an Imperial version, so I thought I'd improvise something similar in a smaller batch with what I had in the cupboard, hoping for something nice to drink this Xmas, and maybe next Xmas... and the one after that...

This is only my 2nd extract brew, so bear with me if I've not listed things right:

1 can Coopers Stout
1.5kg Dark LME
1kg Dextrose
330g Roasted Wheat Malt (steeped at 60 degrees for 30mins)
30g Galena Hops 60 min boil
30g Williamette Hops at end of boil
Final volume 12.5-13L litres
OG 1.105
Target ABV 10.8%
EBC 195 ? (according to beer engine)
EBU 44 (again, according to beer engine)
White Labs Old English Ale Yeast made in to a starter 30/04 with 50g light spraymalt & 400ml water, to be pitched when it cools down a bit!

Any thoughts?

Yep! I wanted to make something that would improve over time, and I could enjoy slowly!

What FG is that calculation based on?

That's quite a lot of dex, i'd be worried about it being a bit paint-stripper-ish.

Would that amount of yeast be enough for such a big beer?

Hi Dave-O, I just used Beer Engine, haven't measured an FG yet! Hoping that ageing will meld the flavours together - first attempt at this type of beer though, so we'll see!

Having re-read your post properly Dave-O, I can confirm the target FG is 1024. Will probably take a reading in a few days, still bubbling just now.

Quick update - Gravity currently 1036, but not much action from the airlock... although it is a bit lost in a 25L FV! That would put the current ABV around 9.4, but with quite a few unfermented sugars in there.

Going to leave it another 10 days and see what happens (due to a family holiday more than anything!)
