IIPA or Imperial Smoked Porter?

Post by Fallen » Fri May 13, 2011 9:19 am

I've got some bits and pieces sitting around screaming to be used up. I was thinking an Imperial IPA (recipe below). There's also some chocolate malt and peat smoked malt left over from my peat smoked porter. Would an Imperial Peat Smoked Porter just be downright silly (based on the ingredients below but with the addition of 300g peat smoked malt and 200g chocolate malt)?

Maris Otter Pale Malt 4.5 EBC 6000 grams 75%
Amber Malt 60 EBC 300 grams 3.7%
CaraBelge 32 EBC 250 grams 3.1%
Carapils 4 EBC 250 grams 3.1%
Crystal Malt, Pale 60 EBC 1200 grams 15%

Magnum Whole 14.5 % 90 mins 0 lbs. 1.1 oz 30 grams 50.2%
Columbus Whole 15 % 10 mins 0 lbs. 1.8 oz 50 grams 29.3%
Centennial Whole 10.5 % 10 mins 0 lbs. 1.8 oz 50 grams 20.5%
Columbus Whole 15 % 80 steep 0 lbs. 0.9 oz 25 grams 0%
Centennial Whole 10.5 % 80 steep 0 lbs. 0.9 oz 25 grams 0%
Columbus Whole 15 % Dry hop 0 lbs. 0.9 oz 25 grams 0%
Centennial Whole 10.5 % Dry hop 0 lbs. 0.9 oz 25 grams 0%

Final Volume: 20 Litres
Original Gravity: 1.082
Final Gravity: 1.021
Alcohol Content: 8% ABV
Total Liquor: 33.8 Litres
Mash Liquor: 20 Litres
Mash Efficiency: 70 %
Bitterness: 80 EBU
Colour: 44 EBC

There arn't really enough hops in there for a big IIPA its more like normal IPA hopping levels (us ones at least), I would drop he crystal down to 500g put in the smoked and peated malt and have yourself the Porter.

Was thinking the same thing. I've got more hops knocking around (Bobek, Goldings, NZ Cascade) so could increase the hopping for the IIPA. What quantity of hops do you reckon it'd need?

I do like the idea of a big porter though!

A basic way to look at IIPAs is that you take your normal IPA, double the malt and x the hops by 2. But I would say you in 20L need about 450-500 g of hops ish. Don't think any of those hops would get through the ones you already have, they would get overpowered.

But if you really want to do one, then just order some, themaltmillers deliveries are very quick.

I'm trying to use up as many odds and ends as possible. Think I'll go with the porter.

Cheers for the info, an IIPA is on the cards in the near future

Right then, I did a hop audit and realised that some more stuff needs used up. I'm going to take advice from 196osh and 'Radical Brewing' and indulge in a stupidly hoppy IIPA. So here we go:

Maris Otter Pale Malt, 4.5 EBC, 6500 grams, 75.6%
Amber Malt , 60 EBC, 400 grams, 4.7%
CaraBelge, 250 grams, 2.9%
Carapils, 250 grams, 2.9%
Crystal Malt, Pale, 60 EBC, 1200 grams, 14%

Magnum Whole, 14.5 %, FWH, 100 grams, 33.2%
Pilgrim Whole, 11.75 %, FWH, 100 grams, 26.9%
Columbus Whole, 15 %, 20 mins, 50 grams, 9.7%
Pilgrim Whole, 11.75 %, 20 mins, 100 grams, 15.2%
Columbus Whole, 15 %, 10 mins, 50 grams, 5.8%
Pilgrim Whole, 11.75 %, 10 mins, 100 grams, 9.1%
Centennial Whole, 10.5 %, 80 steep, 100 grams, 0%
Pilgrim Whole, 11.75 %, 80 steep, 100 grams, 0%
Nel Sauvin Pellet, 13 % , Dry hop, 100 grams, 0%

Final Volume: 20 Litres
Original Gravity: 1.088
Final Gravity: 1.023
Alcohol Content: 8.6% ABV
Total Liquor: 34.4 Litres
Mash Liquor: 17.2 Litres
Mash Efficiency: 70 %
Bitterness: 385 EBU
Colour: 47 EBC

I won't ask whether this is sensible, but will it work?

I think 300g of peat smoked malt will be too much, unless you've used the stuff before and know that you like that much of it.

It's pretty "characterful" stuff, even in small quantities.
