argh, the white wine is on the go for nearly 4 weeks now, i used youngs active yeast, not super wine yeast, is that why its taking so long?
Really need to get this sorted out asap as im out of stock of home brew!
I have some of the red on the go too as in 1 gal, cant wait for that, and wont be doing any white after making that!

ive used both of those yeasts now and fermentation was much quicker with the super wine yeast

Super wine yeast is amazing stuff,
maybe because it has its own specialised yeast nutient in with it!
I always have a jar in my fridge and throw some in when im experienting with brews
it seems to go well with most things and it has the power to reach those high ABV% if required

i was told the active yeast would not brew to as high % so i went for that as this is what i drink nightly. I wish i had gone for the super yeast now, used that lots of times, and im really waiting for the wine to be done.

ive done this one a couple of times and it tastes pleasant but still lacks body. trying to think of ways to add to it. someone told me adding raisins would help but im not sure because i dont actually like the taste of raisins. any other options that anyone else has used?

will they taste like raisins though when its brewed? Im not that experienced yet, but i know a little bit of something can add a lot, a lot of something will make it taste of that thing if you know what i mean.
I have the 5 gal nearly ready for bottling now, its taken ages, and it does lack something i have to be honest, but when brewed as 1 gal it was really nice.

For more body try sultanas rather than raisins as the latter can be bit over powering and make the wine taste like sherry. About 100g in a gallon makes a noticeable difference...

I have just put on:
4x co op cheap apple
1x cloudy apple
5x welshes red grape
2kg sugar
2 ts acid
super wine yeast
neutrient
up to 5 gal
now, the sg is 1040, i didnt buy enough sugar! So ill get some tomorrow and sort that out [ ill add another 1kg]. Did i need to put the acid in?
Should i add anything to it like the raisins?

I would say another 3tsp of acid will get you to a nice light dry rose that will be very pleasant indeed! I wouldn't add anything else (especially not raisins) with the exception of pectolase, unless you're not bothered about the cloudy apple juice potentially carrying over some pectin haze.

You can add it during or after fermentation.
I always add a tsp per gallon as I pitch the yeast on anything I think might suffer from pectic haze.

ive added that yesterday, so i just need to up the sugar a bit now.

For sugar I'd say you need a total of 3.5 to 4Kg of added sugar. So if you already have 2 in, then another 1.5 to 2Kg should get you to 1.080-90 which is right for the light body you'll have...

sugar was added then and its all brewed out.
2 days ago i shook the hell out of it, and came to bottle it today, and found that it was FULL of c02 still, never had problems liek this before and the amount that came out of it took me 20 mins of shaking to get rid of, ill do more i think before i really bottle it...
really need it to be finished, stores are low...
