Growling Weisse Recipe Help

I have put together the below recipe for a Weissebier I am hoping to make this weekend. Does it look reasonable, any recommendations for changes.


Growling Weisse (Weizen/Weissbier)

Brew Length 44 Litres

Original Gravity (OG): 1.052 (°P): 12.9
Final Gravity (FG): 1.013 (°P): 3.3
Alcohol (ABV): 5.11 %
Colour (SRM): 7.5 (EBC): 14.8
Bitterness (IBU): 14.0 (Average)

4500g Maris Otter Malt
4500g Wheat Malt
400g Munich I
150g Extra Dark Crystal

60g Tettnanger (4% Alpha) @ 60 Minutes (Boil)

Fermented at 20°C with Safbrew WB-06

Looks good to me, although not sure about the crystal.
Never tried crystal in a wheat beer... I'd have thought upping the munich percentage at the loss of some MO and perhaps some carafa or even a bit of chocolate maybe for colour would be more suitable? Certainly no expert but I do love a weisse beer.

I guess you're after a slight caramel note that you wouldn't get from Munich/Carafa?

It's going to turn out a bit like my Hell Weisse I did back in May, at least colour wise (sorry about the crap iPhone pic)

that is 8 SRM with a good chunk of carahell and caramunich III.

it's a really good beer but I think next time I'm going to cut back on the crystal malts. Looking at your recipe you have about half the amount of crystal malts than I used so I'd go for it. The EDC will give it a nice caramel note (like dave-o said).

I used 10% dark crystal in a dunkelweizen (using the cropped yeast from the hefe) and it gave it a nice caramel/toffee component.

Thanks All.

I am hoping to get a little bit of colour and Caramel flavour which is why I went for the Dark Crystal, it has also been suggested that I up the hops to bring the IBU to 20.

I may do that as well, of just go half way and take it up to about 17.

I am aiming for something similiar to a Schneider Weisse as I quite like that. I can use it as a base and then experiment once I've got the first brew under my belt.

I did a Schneider (tap 7 clone) last year and it was spot on taste wise! Maybe a bit darker next time, say 0.8% carafa SIII

Thanks for that, it looks good.

I'm a bit limited on ingredients at the moment, having to use what I have in stock so can't change the recipe tooo much.

I can't buy any more ingredients at the moment as one of my dogs has just ruptured his Cruciate ligament so is about to cost about £3,000 in vets bills. Leaves me a little short on pennies for the time being.
