Centennial recipe
Hi all, I have 200 odd grams of Centennial in the freezer.
I was thinking of brewing an all pale malt brew (maybe with a little wheat malt for head retention) to come out circa 4.5%-5% abv using just Centennial for bittering and aroma.
Has anyone got a tried and tested recipe?

Yes, I have done a single hop brew using Centenial. It`s OK but I would blend the hop next time I used it.It goes well with Ahtanum, Simcoe and Cascade. I thought it a bit `woody` on its own and the fragrance soon reduced.
I made 4 gallons at 5.3% abv. so you would have to increase the volume for a lower abv. The sugar is included to thin down the mouthfeel and sweetness a little, especially if using all Maris Otter. Any way here it is;
4.8 kilos MO
200 gms crystal 120
250 gms white sugar.
100 gms. Centenial
Mash at 148 deg. F for 90 mins
Boil 38 gms hops for 90 mins. (possibly reduce to 30)
30 gms. for 30 mins.
32 gms. on s/o (possibly increase to 40)
I fermented with Fermentis s-04 merely because I had it in but others could be tried.
My records show no problems with the brew.Final gravity was 1010.
It was rough filtered into bottles and is now 3 months old and crystal clear.. Nice chilled with an ox tongue salad.

Have you tried Mallinsons Centennial ? A good showcase of what the Hop can be and is very tasty.

I've got other hops available too. I know critch brewed a pale ale last year using Centennial and Bobek .

Our Saltaire Cascade Pale is Bittered with Centennial & Cascade then Heavily late Hopped with Cascade.

That sounds good mate, are you able to give me a rough recipe? (% of malts, bittering levels and aroma additions) I'm gonna do a 25L brewlength.

Straight off the bottle label:
Pale 87%
Torrefied 8%
Crystal 5% (you could vary the Paleness with either Caramalt or Pale Crystal)
We bitter with two additions, one at the start of a 75min boil and one 30mins in, both additions are pretty similar with the lesser amount being Centennial...
Our Late hopping is pretty massive and that gets a 30min steep before cooling and transferring to the fermenter.
Hope thats enough to go by, as I can't just give you the full recipe and more-so I can't remember the exact weights of the bittering additions and I'm not sure of the IBU off the top of my head either though it is an American Style fairly bitter pale ale.

Kev, I did an all centennial in March. I thought it needed more citrus or a little more sweetness/richness. Perhaps just more late hops or some cascade or amarillo to help. Anyway it went as follows
3800g MO
150g Tor, Wheat
250g Munich
All centennial as follows
10g 70 mins
20g 20 mins
20g 10 mins
10g steeped for 30 mins
Yeast US 05
Mashed at 68C
OG 1042
FG 1008
It was a nice brew but just had a woody/grassy note to it!
