Bad Panda Ginger Summer

Post by Gricey » Sat Jun 25, 2011 12:28 am

So inspired by Floydmeddlers gingery beer and my love of beer with ginger in (about 5 different ones at Glastonwick this year!), I will be attempting a summery ginger beer of my own... session strength.

Bad Panda Ginger Summer

Batch Size 23L

Malt Bill

3.5kg Maris Otter (92%)
0.2kg CaraMunich 80 (5%)
0.1kg Torrefied Wheat (3%)

@75% efficiency leading to an OG of 1.038

Hops & Friends

25g First Gold @ 60m
25g First Gold @ 20m
250g peeled grated ginger @ 2m
20g crushed coriander seed @ 2m
50g First Gold @ Flameout, 20 min steep

@7%AA leading to a bitterness of 30.4IBU

Ferment @ 20C with US-05

Hope to brew this next week...

I love first gold but haven't had it that much, so a bit of an experiment...

Any idea how strong the ginger taste is with the 250g addition?

I like a good bite from the ginger and was wondering how much to use.

Cheers Baz.

IME you need alot. I was aiming for Old Jamaica/Idris Fiery levels of ginger for one of my brews. 500g of root ginger didn't even come close.

I'd also say that with a very gingery ale it's worth using a lot of crystal or mashing hot. Thin/dry beer doesn't really go well with high levels of ginger IMO.

I tasted a sample from the FV on Monday night. It's down to 1.014 and the ginger is most definitely there, comparable to other gingery beers but definitely not like a bottle of Old Jamaica :-) so pretty pleased with it so far.

Annoyingly this is down to 1.003  so it's 4.5% rather than 3.8%. Bugger. 79% attenuation! I think I will mash my pale hotter to make it less fermentable.

Bottling tonight and hopefully get an overnight mash on for the pale.
