i put a 5 gallon of this recipe on about 5 days ago and im wondering when i should transfer it to an fv with an airlock? ive never siphoned something that's still fermenting before and don't know if there is anything that might cause any problems as i don't want to [censored] it up, anything i need to look out for?

best to rack it at 1.020, then let it ferment to dry (0.990ish) but if you follow the winesathome.co.uk tutorial for wine number 1 in the beginners section it explains all with pics, i've just bottled a wine number 2 and it was lovely, my wine no. 1has been going for bloomin weeks with no sign of stopping however.

As mrmojo says, rack at 1020. No need to worry about anything else, there's plenty of sugar left for the yeast to mop up any excess oxygen introduced during racking and plenty of yeast left in suspension to carry it all on. Just go for it the same way as if you were racking something fully fermented. Bear in mind it might take a few days to kick back off again after racking, so don't panic if it appears to have stopped.

I'd also second that the wines at home tutorial series is excellent =D> and you'd be best to follow those on your next attempt(s).

BTW - start any juice wines in an airlocked vessel. Saves hassle. You only need to faff about with buckets if you're fermenting a fruit pulp.

im drinking this now ;)

I just scaled up the wines at home recapie [ or i think i did ! ] and it tastes different to what i thought it would...

Its quit well drinkable, not really much int he way of flavour, but im not sure as i have eaten lots of chillis recently, but its nice, i cant describe the flavours properly, but its like a slight hint of vimto, alcohol of cause, nettles, and strawberry's.

if i think about what it is, red grape and apple juice, i can taste that too, its a light wine, its not a dark rose i have brewed, not sure how it will age as i have never done that, but from my understanding, just as im about to finish drinking the batch [ 1 mnths time] itll be the nicest, and infancy not good. This is good now!

thanks guys. took your advice and racked today, was a little lower than suggested (1012) plainly because i didnt know i should have done it earlier. as you said Gordonmull i was thinking about just doing it in an fv with an airlock straight away but i didnt think my airlock could handle that amount of bubbles as i only use the small bubbler airlocks and their quite lively even when ive got them on a one gallon fv never mind a 5 gallon. didnt want to risk a blow off but not having to rack sounds much easier. and i was panicking because it hadnt started bubbling again but now i know this is normal i can calm down again hahaha
