This is AG #4:
I had a bit of left over Cascade to use up, so brewed a pale with it. Fermented with yeast recultured from bottles of Hop Back Summer Lightning.

4kg Golden Promise Pale Malt
1kg Munich Malt
150g Crystal Malt
40g Northern Brewer Hops (90 min boil)
1tsp Irish Moss (20 min boil)
24g Cascade Hops (5 min boil)
50g Cascade Hops (30 min steep at end of boil)
Estimated bitternes: 43.4 IBU
Estimated colour: 14.4 EBC
OG: 1.048
Boil volume: 27 litre
I've tried a sample today, at 1.021, and it smells and tastes fantastic. Not sure how much lower the gravity will get with this Summer Lightning yeast, but I shall persevere.

Sounds interesting. I bet it will be quite malty with all that Munich & Crystal.
Maybe a bit like an American Amber Ale?

id go for cara over the crystal(depending which crystal your using) and up it to 5%. munichs a cracking malt i use it in some of my best beers. but i bet yours will be bloody nice

This has eventually finished fermenting, and it's kegged (with a few bottles filled as well).
The colour is quite amber, as you can see on pics here, and it smelled absolutely beautiful as it went into the keg/bottles.
Can't wait to try it.

Was FG 1012?Fermentation update: it may have taken off like a rocket, but it sure slowed down after a the first week. It took seven days to get down to 1.021, and then another 13 days to get down to 1.015. It finished after 29 days, a lot of rousing and some yeast nutrient, at 1.021, meaning an approximate abv of 4.7%

The hop aroma isn't as pronounced as I'd like, but the bitterness is IMO spot-on. It's fairly malty, but not too much to my palatte.phatboytall wrote:How did this one taste? Very malty and sweet? or good balance?
The one thing I would say about it us it has a fairly yeasty something to it. Although it's very clear, there's a note of yeastiness to it. Possibly I'd go for Safale-05 next time, or something similar.
I expect i'll repeat the grist of the recipe in the future, but use a different yeast and up the late hops 50%-ish.
