HONK! IPA

I'm brewing this next week - an American-style IPA, inspired by my mate who is mad for Geese. Nothing to do with Goose Island, by the way, I've never had a Goose Island beer. "Honk" mainly becuase it's going to smell, quite strongly, I hope, of lovely lovely hops.

1 Pkgs SafAle American Ale (DCL Yeast #S-05) Yeast-Ale

Est Original Gravity: 1.064 SG
Est Final Gravity: 1.018 SG
Estimated Alcohol by Vol: 5.95 %
Bitterness: 57.8 IBU
Est Color: 11.2 EBC

The Nelson Sauvin is only in there to use up the end of a packet from a brew the other week - similarly, the uneven numbers for the aroma hops are becuase that's exactly how much I've got left over of each.

Also, I think the OG will likely be a little higher than 1.064, because I seem to be getting closer to 80% efficiency.

In a back-of-a-fag-packet way, yes. With BIAB I can squeeze a lot of the wort out of the hop bag anyway, so I'll lose a lot, but perhaps not as much as you might expect.

This is the most stupid recipe I have ever seen.

Mine is 10 days in the FV, and down to 1.020 from 1.068. Smells fantastic. Big big mouthful of hops on first sip, with a long bitter aftertaste. It's too much, at the moment, to be honest, but it's so green you could see it from the moon. Once it's had a couple of months it the bottle it'll be a beaut. Very cloudy with S-05 as well, so a very yeasty tang to it.

Overall, I have high hopes.

Bit of an update by way of thread-resurrection.

After primary fermentation I racked this to a 2nd FV with 40g of Nelson Sauvin dry hops, left that for 6 days then racked off to a 3rd FV and left that in the cellar at between 14C and 15C for getting on for two months.

Bottled it today, and the sample I took tasted fantastic. It is a monster though: 1068 OG, 1013FG, meaning a head splitting 7.2% abv.

It is delicious though, and exactly bang on the money what I was hoping for.
