What to do with 50+ KG of grain?

I may be buying up some stock from someone locally who's packed in. Question is what could I brew with the following?..

Grain:
25 kg Vienna Malt
25 kg Munich Malt
25kg flaked maize
10kg lager malt
15kg roasted barley
18kg crystal malt

Hops:
4kg Green bullet about
3kg Amarillo about

This is a bit of a leftfield suggestion but, I reckon, and you may think this is a mad suggestion, but I reckon you could probably brew some beer. :D :D :D

Mind you, it might take a while to get through that maize and roasted barley...

Brewing beer you say?... I may have to look into that!

I've never used any of the above malts in any quantity so don't really know much about them. May sell a few kg to help with costs.

I have brewed with 100% Munich and 100% Vienna. I would heartily recommend both.

Brew a lot of big batches :)

Classic American Pilsner uses a fair amount of flaked maize
Guinness clone for the roasted barley, tbh I'm struggling to see how you would use up 15kg
Maybe a schwarzbier or vienna lager for the munich and vienna?

I love really burnt/espresso stouts so I recon I could get through the roasted barley in 12 months.

This is all rather elementary really as I don't currently have a boiler!... or a mash tun..... or a barrel for that matter!! :oops: :lol:


Rest assured, A barrel is on it's way and If I buy the grain and hops I will also be arranging the rest of the kit ASAP.. lol

Looking back throu old recipes and my beefed up suburban stout (the 8.2% version) uses just over 900g for a 25ltr brew sooo..... If I double the brew length and avoid driving or operating heavy machinery, I'll be fine!! lol

Use it like a larder of ingredients - don't limit your self - I wish I was in your position - lots of lovely stuff there - tho that roasted barley is going to take some getting rid of.

Don't over use it - its well strong.

I have made great beers with almost 100% Munich malt (Munich Dunkel) and also Vienna Malt (Vienna Lager). Also, most Octoberfests are a combination of possibly both those malts plus maybe some Pilsner malt (I see you have some lager malt, I'm sure that will work). A Swartzbier is also mostly Munich and Pilsner malt however you'll need a bit of Carafa II, don't use the roasted barley for that it will mess up the beer. You can also make a very nice CAP with the Lager malt as well as the flaked maize (up to 30%). In fact, the next beer I'll brew is going to be a CAP however I like doing a ceral mash on corn grits rather than using the flaked maize but I have used it in the past and it works out really well. A couple of other beers to use the maize on are of course the American standard lagers (you know BMC but I personally wouldn't bother) and a throwback American Pale ale (I do a Ballentines XXX clone that is pretty good), it's about 20% corn and alot of "C" hops so it's interesting. Finally, you can make an American IPA and cut the malt with the corn, it will lighten up the beer and turn it into a pure hop delivery vehicle. An American Cream ale is as much as 30% corn and tastes pretty much like an American standard lager but feremented with ale yeast (again, I probably wouldn't bother but to each his own). By the way, you can get one hell of a stuck mash with flaked maize if you use a high percentage in your mash tun (been there, done that).
Drinking:Saison (in bottles), Belgian Dubbel (in bottles), Oud Bruin (in bottles), Olde Ale (in bottles),
Abbey Triple (in bottles), Munich Helles, Best Bitter (TT Landlord clone), English IPA
Conditioning: Traditional bock bier, CAP
Fermenting: Munich Dunkel
Next up: Bitter (London Pride like), ESB
So many beers to make, so little time (and cold storage space)
