Quick question planing a breakspear special from byobra.

The recipe calls for 350g of sugar what weight of pale malt shall i replace this with? And for future refrence 100g sugar is how many grams 0f pale malt?

Try putting the figures into some brew recipe software like BrewMate http://www.brewmate.net/ and adjust until you get the OG.

I think the sugar is as much to do with the mouth feel as it is the OG, though.

Leave the sugar in if the recipe calls for it, sugar reacts with crystal in a delicate and pleasing way

Thanks for the advice i am about to put the sugar in about 30 mins if the boil left.
