Ideas for West Yorkshire ale yeast
Ideas for West Yorkshire ale yeast
I finally got my paws on some West Yorkshire ale yeast.
Any suggestions for a beer that would really showcase the yeast?
The beer will be gravity poured from an improvised cask.
I have the following supplies for the brew;
Maris Otter
crystal 10
crystal 60
crystal 120
chocolate malt
roasted barley
malted wheat
flaked barley
fuggles hops
EKG hops
Any ideas?

Not a very original idea, but how about TTL? There's a recent discussion on cloning this.

93.5% Maris Otter
4% C60
2% c120
0.5% Choc Malt
Fuggles 60mins
EKG 15mins
Maybe sub in some wheat malt for MO in place of torrified wheat?

West Yorkshire brews:
1) old school, now no longer brewed, in Yorkshire at least: Tetley Bitter, Websters Bitter, Websters Green Label. I think Tadcaster's in North Yorkshire so we won't mention either of the Smiths
2) current: Taylors Landlord, Wharfebank Brewery Tether Blonde Ale, Saltaire Brewery Blonde Ale, Cascade Pale Ale, Chocolate Stout; Leeds Brewery Pale Ale. I'm sure there are more, but all of these are very very nice (can't speak for the stout as I haven't tried that one)

7711 gms MO 86%
454 gms flaked barley 5%

227 gms wheat malt 2.5%
181 gms C120 2%
45 gms choco .5%
EOG = 1.055 (efficiency 82%)
10.7 SRM
mash @ 68C for 60 mins
85 gms fuggles @ 60 mins = 21.6 IBU
85 gms EKG @ 15 mins = 11.9 IBU
Total IBUs 33.5
Pitch @ 17C
Allow the temp to rise to 20C and keep it there for fermentation

I'm not familiar with any of the beers named above so I'll need to research them and the recipes.
This is the first of several with this yeast and the intent is to brew a beer to showcase the yeast.

Here is a Landlord Clone recipe just for your general interest, I realize that you haven't any Golden Promise. You would caramelize a portion of the first runnings rather than using crystal malt.
