Munich Malt

hi all

Have ended up with 5kg of Munich nearly out of date that didn't really work in the recipe i bought it for (an IPA).

Anyone have any good recipes i could use it up in, i like my wheat beers but i also have a WLP515 Antwerp yeast in the fridge i've been wondering what to do with.

Any Ideas?

St Austells Admiral sounds interesting but I think I'm going to try 100% Munich. Anyone any thoughts about using WLP515 with it or a lager yeast or an ale yeast?

Hops? I have some Tattnang for lager or Northern Brewers and lots of Cascade for ale.
Any of those sound a good combi?

A Dunkel would work nicely - use the lot in 5G and tettnang to about 20IBU at the start of the boil (and possibly a small addition with about 20min left). Ferment with a lager yeast.

Not sure Antwerp would work with 100% munich really myself... You could go for a 100% munich ale with cascade throughout too.

(BTW: Admiral Ale by St Austell *is* 100% Munich effectively - their "Cornish Gold" malt is basically Munich malt. It has cascade and styrians for hopping)

I vote for a Dunkel as well, in fact, that is going to me my project on Sunday. What I do is mix Munch light and dark 50:50 (for complexity), add a smidge of melonodin and a bit of Carafa II for color then decoct the hell out of the whole thing. I shoot for a 1.055 beer and hop roughly what Coateq suggests. I have a great big yeast cake which has just finished fermenting a CAP I plan to put to work. If God is smiling on me, I'll get a malty but at the same time dry, well attenuated beer with just enough hops to balance the sweetness from the malt. By the way, some might tell you to add some crystal malt but I would urge you to ignore that advice. It will only serve to make the beer sweeter,fuller and more bock like. You want malty but you don't want sweet, it really makes for a nice beer, enjoy. :D
Drinking:Saison (in bottles), Belgian Dubbel (in bottles), Oud Bruin (in bottles), Olde Ale (in bottles),
Abbey Triple (in bottles), Munich Helles, Best Bitter (TT Landlord clone), English IPA
Conditioning: Traditional bock bier, CAP
Fermenting: Munich Dunkel
Next up: Bitter (London Pride like), ESB
So many beers to make, so little time (and cold storage space)

Well,
was torn between a Dunkel and a 100% Munich and then i noticed my temp control unit has packed up so that puts lager out of the question.

Going with
5kg Munich
250g Torrefied Wheat

14g Cascade 90 mins
14g Cascade 15 mins
20g Cascade flameout

Brew Lab 3524 Yorkshire 1

Sound ok? got a day off Monday hoping to brew it then

I'd mash a bit longer than you normally would, I've made a fairly Munich-heavy beer before and efficiencies went down a fair bit. :)
