Choclate Stout

Post by EsJay_Brewing » Sun Oct 30, 2011 9:23 pm

Hey,

Today I tired out a chocolate stout using the following:)

Pale Malt 4500g
Chocolate Malt 600g
Crystal Malt 400g
Invert Sugar #3 130g
Dark Coco Powder 125g (Last 15mins)

Hops

Fuggles Alpha 4.5 70g
Goldings 6.59% 10g (Last 15 boil)

Cask

Chocolate Extract

Brew length was 23ltr with OG of 1053 (which i hit) Looking at a 5.2% Chocolate Stout with a bit of luck :)

Yeah, i'd imagine it'll be quite harsh with all that choc malt, but maybe that was the intention?

Thats a lot of chocolate malt, but I think you will get away with it.

I did a recipe

3.5 Kg Pale
.5 Kg Chocolate
.5 Kg Wheat
.5 Kg Amber

It was a little heavy on the chocolate, but still quite nice, especially once it matured a bit.

I'm drinking what started out as a mild, but by the end of the brew day was a porter.
Only 250g of chocolate malt and 100g of carafa special 3.
Nicely chocolateness to it, supriseingly (sp?)

I've read that chocolate malt is harsher than the roasted barley, n black malt actually is very subtle (i've used 10% before).
