Sterling makes a great czech pilsner.
I'm just here for the beer.

Yup, you can use Clusters in a CAP, there is some historical correctness in that Clusters was the only variety over here back in the day and so was presumably used in the early beers. I have used them in both a CAP as well as a throwback American Pale ale. Franky, I don't really care for them, many say they have a "cat piss flavor". Having never partaken in cat piss, I can't really can't say but I usually hop my CAPS like a German pilsner (and I push it by the way). You ought to give it a try, you may well enjoy the beer and if not, well you can then at least understand the hardships us colonists faced over here in the dark days before being enlightened. By the way, you might consider bumping the corn up to at least 20%, the lager malt you are using doubtless has more flavor than the 6 row pale malt which is historically accurate. I make a preprohibition version which has an OG of about 1.055 and the IBU's are up over 40 with alot of flavor hops and some dry hopping as well (which I recently brewed and is in secondary right now waiting to be dry hopped). :D
Drinking:Saison (in bottles), Belgian Dubbel (in bottles), Oud Bruin (in bottles), Olde Ale (in bottles),
Abbey Triple (in bottles), Munich Helles, Best Bitter (TT Landlord clone), English IPA
Conditioning: Traditional bock bier, CAP
Fermenting: Munich Dunkel
Next up: Bitter (London Pride like), ESB
So many beers to make, so little time (and cold storage space)
