Hi Hagge, welcome to the site

I wasn't aware that utilisation was dependent on pH, thanks for the info. I've considered using my hops in the second boil instead of the first as the gravity is lower and so would aid utilisation but decided against it as the smaller volume would offset the benefits. I think I might give it a go next time to see what the effects are, or maybe split the additions between the two.

Cheers,

L

Splitting the hops sounds like a good idea, I've just noticed that in BrewMate software you get more bitterness with FWH* than start of boil, this contradicts the logic that Hagge is telling us.
pH must be out-weighed in the first runnings stronger wort by the length of time the hops are in for the Soak while bringing up-to the boil. (the gradual raise in temperature from Mid-sparge 65c to 100c)

Bear in mind, I'm just "Say what you see" and have no technical learning to back up my comments :)

*FWH, this term is a bit open to interpretation too, does it mean Bung the hops in the boiler as soon as you start sparging OR does it mean collect the entire volume of Wort in the copper, add the hops and then bring to the boil??

pretty ambiguous!
