Any recipe ideas?

I'm going to brew this weekend but am stuck for ideas. I don't really like doing brews from books, prefering to make something up myself. I just can't decide on a recipe. If anyone has any ideas what I can do I would be most grateful! :D

I have the following.

Grains:
Pale Malt MO 17kg
Crystal Malt 650g
Choc Malt 630g
Black Malt 1kg
Wheat Malt 1.2kg
Caramalt 800g
Flaked Wheat 600g

Hops:
Fuggles 160g
First Gold 80g
Summit 100g
Amarillo 20g
EKG 140g
Mittlefruh 40g
Hersbrucker 100g

Yeast:
S-04
US-05
WLP800
Crouch Vale

Shame you haven't got more Amarillo. One of the best brews I did was just Amarillo and MO with a dash of crystal. What is Summit like? Similar? You could do a nice pale hoppy number with the Summit and lob in the Amarillo at the end.

there's definitely a nice Porter or a Stout in there, you could do a Hersbrucker / Mittlefruh Pale, or maybe a Summit / Amarillo IPA with any extra bittering needed coming from the First Gold.

Porter/ Stout:
Pale 70%
Wheat 10%
Crystal 10%
Choc 10%
(Or split the Choc to 5% and add 5% Black)
Hops: Fuggles / EKG

Hersbrucker & Mittlefruh Pale:
Pale 80%
Wheat 15%
Caramalt 5%

Endless possibilities really...
You could do an American-style brown with Summit and Dry Hop with Amarillo :)

Hmm i think i'd do a hoppy summer ale with pale malt base, a bit of cara and a bit of wheat. Pool the First Gold and the Amarillo and add them all late. S05.

Chocolate Wheat Porter. For a 5G brew for for maybe 300-400g of chocolate, 100g (or less) of black and launch all your wheat malt and fill up the difference with maris otter to get an ABV of 5.5%. Maybe something like 20-30 IBU's with the EKG for bitterness and no or very little aroma/flavour. As for caramel maybe about 300-400g.

I'm aiming for the wheat and the chocolate to be the stars of the show, so maybe even cut back the caramel.

Hmm, some great ideas there, many thanks. :D I do a regular brew that is all Amarillo and just pale malt so fancied a change from that; until I get some more Amarillo that is. I've never used Summit before and bought them on a whim but not sure what there like and have heard bad things? :? I'm drawn to the stout/porter, I do like a dark beer! I shall get whatever it becomes on this saturday and post a brewday with pics.

This will make a nice a nice porter

5Kg MO
500g Choc
250g Crystal
250g Black

Bittered with First gold to about 38 IBU

A deep dark mild would be lovely, Pale, choc and black poss pinch of crystal and EKG and Fuggles at 60 mins not too bitter.

As happens life got in the way last weekend so I didn't get a brew on. Going to do it this weekend instead and this is what I have come up with (all comments welcome):

10 Gallons - 60 min mash - 75 min boil

Pale Malt 7.9409088 KGs
Crystal Malt 0.4812672 KGs
Black Malt 0.28876032 KGs
Choc Malt 0.4812672 KGs
Wheat Malt 0.43314048 KGs

Fuggles 160 Grams FWH
EKG 40 Grams 15 minutes
EKG 40 Grams Flame Out

Repitching S-04 from last brew.

Not sure if I should cut down some of the first hops and increase the late ones? Any thoughts?

I'm impressed you have scales that can weigh out 8kg of malt to an accuracy of 100 nanograms :)

Hello Horatio,

You better like fuggles with that FWH, I dont think fuggle is suited to american style hop additions.
I didnt quite use that much in ten gallon and I need a knife and fork to cut through it. Totally drowns out the EKG, If I was doing it again I would be using 60g max and see if I can put up with that, the FWH really intensifies the flavour.

I agree with Barney. With all that dark malt going on you don't want so much late hoppiness if any. Thats a lot of choc malt too...I'd trim it quite a bit

It looks like it could be quite bitter too...not the normal match for roasty bitter grains. Less is more sometimes

sorry mate, for some reason I got it into my head that I was looking at a pale ale or bitter(probably through not looking at the ingredients)LOL. The 160g FWH will be cracking in that lot, EKG is a bit of a waste though.

Will be a prize winner that. :)

I may round up! :lol: My software works in % and I cut and paste! :oops:

So cut down the EKG late additions? I'll cut them down by about a third and see what it comes out like. I did wonder about the amount of FWH so may drop them a little too. Think I'll keep the Choc Malt as I have used large amounts before to good effect (well to my taste anyway), I don't like the roastyness of a lot of black malt so use more choc instead.
