First Recipe - am i doing anything stupid?

Post by stom » Mon Jan 09, 2012 10:59 pm

First post and first recipe! I've been thinking off doing an IPA, and quite fancied something quite like Thornbridge's Jaipur(although i'm not trying to make a clone). Having read a lot of Thornbridge's text on their website i now know they tend to heavily aroma hop their beers. I've also been inspired by recipes from Andybiochem (Jaipur clone & Grapefruit IPA) and kck74 from this site. I've come up with the recipe below(mostly a combination of the two recipes listed above with a change in hop type & quantity). I've been kind of limited in hop selection as i have 2 good LHBS and want to support them by buying ingredients locally. I'm also not 100% sure yet about the grapefruit zest addition. Any comments on the recipe would be greatly appreciated.(Please tell me if theres anything blindingly obvious wrong)

Hi, welcome to the board.

I reckon your final gravity seems quite high.. Jaipur doesn't have anywhere near that much residual sweetness, so you might want to bring down the mash temperature to thin it out.. 66c is probably about right for a beer like Jaipur. With that adjustment, you'd be up in the region of 6.5-7% abv, so maybe dial back the malts a bit to get near your target. 2.5kg Pale and 200g Caramalt might get you closer.

If you're looking for a big hop flavour like Jaipur, I would ditch the grapefruit zest and go really heavy on the late and steeping hops. Maybe something like this:

2500g Pale
200g Cara

7.5g Summit at 60 mins (~20 IBU - 14.3% AA)
15g Cascade at 20 mins (~10 IBU - 5.5% AA)
7.5g Summit at 20 mins (~12 IBU - 14.3% AA)
25g Cascade at 10 mins (~10 IBU - 5.5% AA)
35g Summit @ 0 mins, steep for 30 mins
60g Cascade @ 0 mins, steep for 30 mins

Mash at 66c, ferment with US-05
OG: 1.055, FG 1.011
ABV: 5.8%, IBU: 52

That should get you a serious hop explosion of a beer.. Not exactly Jaipur, but something of its ilk. :D

Thanks Beffudler. Thats some really useful adjustments you've made for me. Regarding the grain quantities i've set beersmith to 70% efficiency as this is my first adventures into AG(advice I'd read from other threads). I'm presuming you were accounting for a higher efficiency? The big hop explosion is certainly what i'm looking for in this brew. I was just a little unsure about adding too much at flame out, especially as Summit does not seem to be widely used(i'd substituted in place of chinook, which i'm unable to source at a reasonable price). However I guess with that amount of cascade as a late edition it should have a pretty citrusy aroma!

I'm looking forward to trying this out when my stockpot arrives!

I also see your chesterfield based. I may bump into you at some point if you use Wineworks or Brewmart as I live there too. Thanks again for the advice. I'll let you know how it turns out.

Sorry, I meant to put 2500g Pale - corrected. You might find you get over 70% efficiency with BIAB, but it's a good starting point. A recipe with this many hops can take a few extra gravity points if you do overshoot anyway.

I haven't used Summit myself, but from what I've read it should give a strong orange/grapefruit aroma when used late... Should be a good pairing with Cascade.

You're more likely to bump into me in the Chesterfield Arms tbh.. I don't drive, so I only use Wineworks for emergencies.

Just for the record,

I, er, "borrowed" the Jaipur recipe from Andybiochem. Thank you sir!

And it really turned out fantastic. :D

I brewed this at the weekend. All went well except a slight undershoot in OG, due to me miscalculating how much water would be lost to the boil. I ended up with around 2l more in the fermenter than I was expecting, with a OG of 1.051. I'll put this down to learning the nuances of my equipmemt(this was my first AG brew). I had a quick peak into the fermenter yesterday and was greeted with waft of citrus hoppyness! Cant wait to try the finished beer in a few weeks time. Thanks again to Beffudler for his amendments. I'll let you all know how it tastes.
