Get advice on making beer from raw ingredients (malt, hops, water and yeast)

Got this recipe in the last issue of Brew Your Own mag. Thinking of making it. Any comments?
7lb. Pale ale malt (Maris Otter?)
.5lb Crystal malt 120l
.25 Special roast malt
1.3oz East Kent Goldings 60 min.
.5oz East Kent Goldings 30 min.
.5oz East Kent Goldings 1 min.
White labs WLP002 English Ale

OG 1.038 FG 1.011 3.5 ABV (Recipe figures)

OG 1.035 FG 1.009 3.39 ABV (Beertools figures)

BTW there's another recipe for a beer called...

Peanut Butter & Chocolate Sweet Stout. Any takers?
It's a long recipe but will copy it out if anyones interested. Uses a llot of stuff probably only available State side though eg. Hershey's dark cocoa powder.

Where are you getting the Special roast malt from, or do you know an equivalent?

Session/ordinary bitters are my favourite beers, that recipe looks solid enough. I tend to increase the flavour/aroma hops to at least double that, but that's just me. If you're looking for a nice, hoppy nose, steep a full 60 grams of goldings or styrians at the end. Adjust the recipe in your chosen calculator so that you'll get around 1.038 in your system. WLP002 is an excellent yeast, too.

You could replace the Special Roast with amber or brown malt, or toast your own. I'm not sure where you'd find crystal 120 either.

I personally prefer Golden Promise as a base but MO is equally as good.

Crystal 120 is what I got when I ordered crystal from H&G.

That recipe is in Lovibond, the crystal from H&G is 125 EBC which is equivilent to roughly 60L.

I mean you could substitute without any problems, it just wouldnt be exactly as the recipe intended.

Just noticed the Hop Shop sell dark crystal malt which looks like what you'd want for that particular recipe.

No, the darker crystal is more raisin-y in flavor...more like special B (though not quite the same). You can get dark crystal in the UK (you need something around 200-220EBC). It's nice to mix the light and dark crystals - you get a fuller, more rounded flavour.

I might email H&G to see if they'll bring in some dark crystal... they must be sick of me asking to order in weird and wonderful yeasts though :oops:

This sounds like my type of beer.
