Suggestions for a Recipe

Hello All. I have:

3500g Maris Otter
500g Amber Malt
500g Crystal malt
200g wheat malt
500g black malt

2 x 100g nelson Sauvin hops

Whitelab English ale yeast WLP005

Would anybody have suggestions on how i could use the ingredients - (not necessarily all of the malt together of course-some of them or bit of some of them)
i started off thinking about doing a kentish ale but sort of went a bit astray with the ingredients.
Your advice would be greatly appreciated......

You're not going to get a Kentish ale with Nelson Sauvin. For a Kentish you'd want English hops - Goldings, Fuggles, Challenger, Target etc. NS gives a bitter, citrusy taste to beer. Think Thornbridge Kipling. In fact a Kipling variety may be a good idea. You could make a 23l brew with the Maris Otter, all the wheat malt and 200g of the crystal. Not calculated the exact amount of hops, but 20% at the beginning of a 60 minute boil, 20% at 30 minutes then 60% at flameout. This will give you an IBU of 43 and lots of aroma. Here's the recipe I made. You can tinker with the quantities if you download BrewMate. Not sure how your yeast would handle the recipe - might strip out some of the hoppiness.

In the time it's taken me to have a bit of a tap into Beer Alchemy, staplefordbill has suggested almost exactly the same hop schedule as I was going to suggest.

This is what I came up with, although it's right of the top of my head:

3500g Pale Malt
400g Amber Malt
200g Wheat Malt
20g Black Malt

Mash for 90 mins @ 66C

30L boil, for 90 mins

Hops:
20g Nelson Sauvin, 90 mins
20g Nelson Sauvin, 20 mins
60g Nelson Sauvin, at end of boil.

OG 1.038
IBU 45.6
Colour: 14.2 EBC

Personally I'd leave out the amber malt as a hop-forward beer can be great young but amber malt seems to need a long time to mellow out and become nice. Adding some crystal would take you more towards american amber ale, leaving it out would be more hoppy pale ale.

Using just what you've got, i'd use:

(23l)
All the pale
All the wheat
Half the crystal

20g Nelson full boil
40g nelson 10 mins
40g nelson flameout

And get a sachet of S05 or Notts - no point in wasting an unsuitable liquid yeast on this IMO.

You'll get a light (3.8 - 4%), easy-drinking summer ale with loads of flavour
