Cascade Pale Ale recipe help

Post by john_drummer » Sat Feb 04, 2012 10:22 pm

a few months ago I used a Coopers Australian Pale Ale kit as a base for my first experiment, and the resulting beer turned out absolutely fantastic. I basically took the APA kit, added Cascade hops done three ways - 20 minute boil 20g, another 20g steeped for half an hour after the temperature had dropped to 80deg, and another 20g dry hopped in the FV.

As it was such a good result, I'd like to try replicate it from grain, and I was thinking something like this, as a BIAB recipe to 20 litres using BrewMate:

Pale Malt: 3913g mash at 67deg from a strike temperature of 69deg; 25.5 litres of water to strike

Cascade 60mins 20g
Cascade 10mins 20g
Cascade dry-hop 20g

Safale-US05 yeast
OG 1042, FG 1011, ABV 4.1%

24.2 IBU Bitterness
6.6 EBC colour

Do you think it would be anywhere near? Could it use some other grains? e.g. Torrified wheat, or maybe wheat malt, lager malt?
I have some leftover lager malt, crystal malt, chocolate malt & black malt, although using any significant quantities of the latter two it would obviously be anything but a "pale" ale ;-)

You could add a little torri or wheat malt for head if you wanted, 1-200g would work fine.
You could also use some lager malt, that wont make a whole lot of difference.
I would be inclined to add some crystal, but thats your call really, a bit of malty sweetness is good against the hops.

Why did you drop your 80C steep addition from this one?
I'd be inclined to up the bitterness a little as well, but again it's your beer.
As an example SNPA is around 35IBU, I think.

no particular reason, do you think it would improve it if I added the 80C steep as well?
I might have to substitute some Bobek or Saaz for some of the cascade if I did so, would that improve the bitterness?

Maybe 100-200g crystal malt?

I have the following hops: Challenger, Bobek, Saaz, Cascade, Fuggles, Golding but my LHBS is well stocked if I need something I don't already have

The longer the hops are boiled for the more bitterness will be extracted, but the 80C steep will help your aroma a lot.
I thought it strange to drop that addition when it had worked so well for you last time.

Is 60g of Cascade all you have?
If so, out of the hops you have I would probably use challanger @ 60 mins to get you close to the bitterness you require.
Then do your 10min, 80C and dry hop with the cascade.

100-200g of crystal should work well

I'm probably nearer 40g of Cascade TBH but I can always buy some more

Coopers Sparkling and Pale both have Flaked Wheat. 11%. Also the hop of choice is Pride of Ringwood for authenticity. But I think Cascade will be fab.
I buy from The Malt Miller

Look up Mysterio's SNPA excellent brew uses around 7% Crystal and 30g Northern Brewer for bittering, 30g Cascade @10 minutes and 70g Cascade @1 minute
