Morning all, I'm keen on brewing a light coloured beer with ginger. Brewed a successful spicy Xmas ale (thanks crafty John) which was ruby in colour, so would like the profile of this one to be quite different. Was planning on mostly Maris otter with a perhaps 100g each of torri wheat and Amber malt.
As regards hops I can pick from...

Target 12.66aa
Has anyone got any thoughts on which hop(s) would go best with the ginger addition?

Job done today! Ended up doing 6kg Maris otter (end of sack of bairds) 150g caramalt and 150g torri wheat, with 100g of brewers gold hops and about 300g of grated fresh ginger. Just poured it into the fv to cool overnight as I haven't got a chiller, came out at 1044, got nearly 25 litres so happy with that. First time I've used ginger, smell when I added it for the last 10 mins was fantastic. Had a quick taste of the wort out of the trial jar and quite a strong taste which is what was hoping for.
Ive always used S-04 in past, I've got some of that and also some Nottingham, anyone got a view on which will be better for this beer? Ta matt
