I have been tempted to brew the Coopers Russian Imperial Stout recipe for a while now, but couldn't really justify buying 3 kits for 1 brew, and also didn't want to risk brewing such a volatile brew in a 33L FV.

So I decided to make up my own RIS to 10L with ingredients that I had in stock. All I had to buy was a Stout kit. I have done a few sums, and tried to keep the Malt and Dextrose ratios the same as the Coopers Recipe.............

My Recipe -

Name - Blackout Stout
Style - Russian Imperial Stout

1 x 1.7kg Can of Coopers Original Series Stout
500g of Dextrose ( I thought about substituting 200g for Black Treacle, but thought better of it in the end)
500g of Light Spraymalt (DME)
250g of Crushed Crystal Malt - 120 EBC (Steeped for 45mins from 80C)
50g of Crushed Roasted Barley - 1200 EBC (Steeped for 45mins from 80C)
25g of Fuggles Leaf Hops 4.6%AA (Boiled for 10mins)
2 x 7g Coopers Ale (AC) Yeast Sachets (Rehydrated)
Brewlength - 10L (Treated Tap Water)
OG - 1.084
Fermentation - 33L FV in Brewfridge set to 21C ambient with a sealed lid and blow-off tube.

I started by steeping the Crystal Malt & Roasted Barley in a muslin bag in 3L of treated water @ 80C for 45mins, I then removed the grains and boiled the wort for 5 mins and then added the Fuggles Hops and continued to boil vigorously for another 10mins.

I then strained the hopped wort through some voile into the FV, and then poured the Stout extract in and mixed away. Then in went the Dextrose, some more treated water up to the 8L mark, and finally the DME was mixed in. I then topped up up the FV to 10L and checked the OG @ 22C, it was a healthy 1.084 :D

I also rehydrated the yeast in 150ml of 26C treated water for 15mins, stirred, then left for another 15mins before pitching the little buggers into the feast of their lives :mrgreen:

AG#42 - Heritage Double Ale - 10.5%

Hi mb...never done the RIS but just done a stout with 1 kg dark spraymalt and 450 gram tin of treacle...good. .oh yes but after time the treacle taste is hardly there anymore not so strong as when it was younger.......but still bloody good..mmmmm

It's been relatively tame in the FV, with the Krausen only reaching the 23L mark ;)

It is certainly producing plenty of CO2 from the blow-off though!

I took a look in the FV tonight and the Krausen had fallen into the brew, and a little voice was saying "check the gravity, have a taste" :oops:

It is on day 5 and has dropped 60 points to 1.024 (8.0% ABV), and tastes of liquorice :D , but then obviously has that nasty coopers yeast aftertaste and is probably now fermenting in my stomach!

I was expecting this black, bitter, undrinkable stout, but it's none of those :)

I will try and leave it alone for a further 5 days before racking it into a clean FV.
