It wouldn't be a bad idea to do at least one brew without the combi, just to make sure the problem is not elsewhere in your processes.
And, yes, Eric. I remember the 1980's cutting edge of water treatment. Water came in two types: hard or soft. I think I probably asked my mum what ours was. Technically advanced brewers such as myself vaguely chucked in a teaspoon of this and half a teaspoon of that. Did it make any difference? No idea. The beer was fine. It turns out that beer is not that hard to make...

Just going off topic a bit...........but am I missing something about the boiler? What difference does it make if it's an older combi or a more modern condensing combi?boingy wrote:Eric's point about the water filter is an excellent one. That would be my first point of investigation.
Two obvious questions:
1. Have you tried cooling and tasting the water?
2. Are you sure it's a combi boiler? Don't laugh, I have a mate who got confused between combi and condensing boilers.
One less obvious question:
3. What yeasts are you using? Are you harvesting/reusing any?
The other thing is to take a step back and look at your water treatments again. It's really easy to overdo that stuff, much to the detriment of the beer.

As far as brewing is concerned, none, I've had both types. It alluded to a mistaken presumption that a specific standard domestic condensing boiler was therefore a combi.trucker5774 wrote:
