All,
It's been a while since my last brewday. Work and other stuff has been getting in the way. you know how it goes

Anyway, I thought I'd try Citra, having finally laid my hands on some for the first time. I've read it can be a bit over-powering if it's just on it's own, so I thought I'd try it with another new hop (to me anyway): Apollo. Anyone used this combo before? I'm thinking of mainly using Apollo for bittering, with the Citra 5 minutes before flameout and then steeped (and maybe dry hopped too). Yeast will be WLP001, and I'm going for an AIPA style, although not too strong, probably in the 4.5% ABV range. Malt mainly pale malt, with a bit of vienna thrown in. Probably mash highish to try to retain some body - if WLP001 is anything like safale s05 it'll end up being very thin otherwise.
Anyway, thoughts on hop combos to go with citra please. I have the usual suspects - some EKG, Challenger, Nelson Sauvin, Apollo, Warrior. No cascade though.
Cheers.
