Should be safe to top it up to be honest, just make sure whatever container you put it in is sterilised and you should be right.
See i am a huge fan of fast ferments, got some yeast which works upto 28oC so i just set it going at 25 and leave it at that. chugs right through, its so good infact its done and it stinks of apples and it smells goood :)
I'm about to pour some into storage bottles and go from there, will update with further pics

no i've not used gervin, hows it getting on?
Well mines done and out now, and its fairly cloudy, but i used 2 sieves toget all the pulp out and then got a potato masher to squeeze em for the extra juice.
Seems to have worked well, its just carbonating now so hopefully by next weekend itll be ready

Mines out, apparently it taste exactly like pear syrup. Smells slightly yeasty because it fizzed like mad when the bottle was cracked and kicked all the sediment back into the brew.
Overall through, great success.

Few weeks later and its ok, being honest its just too sweet and doesnt taste of very much, ideally i think it needs a drop of some concentrated flavour in the top and this would probably help it considerably.
