Hop monster IIPA

Im having a try with this new Kohatu hop, which I havnt tried yet.. since its in pellet form, im having a go at an all pellet brew, which is totally new to me.. guess il make my mind up on which i prefer!


Anyway, Im wanting to make a "big beer", loaded with hop fruity piney freshness.

Im thinking:

OG 1070
ABV 7.6
IBU 98

MO Pale - 5900
Torrefied wheat - 100
Sugar - 500
Vienna - 750
Carapils - 250


Hops

Columbus - 27g at 60 (all i have left..)
Chinook - 50g at 60
Cascade - 40g at 10
Kohatu - 50g at 10
Chinook - 20g at 10
Cascade - 20g at flameout or FWH
kohatu - 20g at flamout or FWH

Dry..
Kohatu 30g
Cascade 30g
Amarillo 20g

Ferment with 2x US05

Im fairly happy with the grain bill, Its one i've used before with good results. Its the hops im a little less sure of. Im debating the ratios, timings, and the debate between flamout vs FWH.

Any input would be massively appreciated :D

How would you know what Kohatu hop will be like mixed with all those other hops?
I've used Kohatu a few weeks ago in a single hop brew.Going in the keg tomorrow.
100 grams spread over the last 15 mins plus dry hop.
All I will say it is a little disappointing.You BIG up these "NZ hops" ,then this one turns up.Nice but subtle.
A walk in a pine forest.
Next time I would double the amount and just use as aroma hops.
So with yours I would stick in 50g at flame out and dry hop the other.
Loose the Chinook at 10,and the Amarillo/Cascade dry hop.
The grist is fine but the 100g of torri won't add anything

The other thing with hop pellets is, do you just drop then in the boil,then find out you have run off problems,or will you use hop sacks?

RE the pellet issue, i use a hop strainer in my boiler, which im going to wrap up in a lovely fine nylon mesh bag before the boil. I hope this will sort it... if not, it will have to be a sterilised seive lined with muslin!!

The chinook late addition is just to give it a bit of a smack in the face. I've had mixed results with chinook late, but have found that a little hit can work as a bit of a delivery vehicle for the more traditional aromatics.

On your advice, Im going to move some kohatu to flamout/dry, and some cascade over to late i think... but not totally lose it from the dry. Amarillo is gone. Im not sure what i was thinking there!! The last brew i did was VERY amarillo heavy, and came out a bit like Sunny D :s!!!!

As for Kohatu going with the others... its a gamble.. if it doesnt work, i wont have to share it :D

Pellets will clog your hop strainer if lined with a mesh and will go through to the fv without the mesh. It will be difficult to deal with at this point in the process, so a hop bag may be the way to go. I have never tried using a bigger sieve but pellets are not usual with a strainer approach as their clogging ability is high, people tend to use them in a whirlpool or hop back set up.

Just put this into brewmate and the 2 x 60 minute additions give 103IBUS? Atleast using the AA%% that I put in which unless brewmate is now messing with me where from WHS, there was a study done by basic brewing which found that going over 50IBUS at the 60 minute mark is a waste of time as typically the brew wont go over 50 at that point. To get higher you need to add more hops toward the end. Just a though. I would second dry hopping with much more hops too so you can really get a feel for them.
