Citra and cascade ideas please.

I want to do a summer IPA style beer.

I'd read about Citra and wanted to try it but then read cascade went well with it.

My plan was a fully citra brew to anout 4.5%, possible all pale malt but with a splash of crystal.

If i used the cascade as well should i just use it as 10 min and post boil? Mix the citra and cascade 50:50?

Any ideas please :)

I'm currently drinking this, and it's turned out incredible - I highly recommend it. You won't need to bother with the strange mix of malts, I don't think, the recipe was a user-upper. I'd say use 92% pale or lager malt, 3% or so crystal/munich/whatever and 5% torrie or wheat malt. The amazing flavour is coming from the hop schedule. I've made some comments in the brewday thread about perhaps upping the IBUs a touch - I'm not so sure that I'd do that now. It really is a lovely beer and goes down like pop (or Five Alive/Um Bongo as per the discussion in the thread). I brewed it at about 4.2% as I got some extra brewhouse efficiency from getting the water treatment right. I'll be keeping it at this OG next time I brew it.

My American Pale ale recipe:

Zappa American Pale Ale:

Pale Malt(MO) 3200g
Vienna Malt 1500g
Wheat Malt 300g
Caramalt 500g

Cascade, 5.70% AA 20g 60 Mins
Citra 13.70% AA 10g 60 Mins
Cascade 20g 15 Mins
Cascade 40g Flame Out
Citra 20g Flame Out

Efficiency 75.00%
Original Gravity 1.053
Final Gravity 1.013
ABV 5.20%
Colour (EBC) 14
Bitterness (EBU) 40

Fermented out with US-05 yeast, tried, tested, delicious. This is my signature brew.

That combination of hops works really well, though I think cascade has really good bittering qualitys and like a bit of citra for aroma too. All pale with a splash of crystal would work really well with any combination of these hops!

I've just brewed this, mainly to use up some leftovers. Its in the fermenter now and smells great.

Style: American Pale Ale
Yeast: WLP001 (2L starter) or Safale US 05
Fermentation Temperature: 19c
Original Gravity: 1.052
Total IBU's: 40 ish
Colour (EBC): 12
Efficiency at End of Boil: 80%
Mash Length (mins): 90
Boil Length (mins): 60

Volumes etc.

Your Vessel Volume : 52L
Your Vessel Diameter : 45.5cm
Water Required :32.65L
Mash Temperature : 67*C
Volume at End of Boil :22.68L
Volume into Fermenter :20.41L
Brew Length : 18.9L
Total Grain Bill :4800g

Grains - Colours - Percentages and/or Weight

Grain 1: Pale Malt *** 4077g
Grain 2: Caramalt *** 272g
Grain 3: Biscuit Malt *** 272g
Grain 4: Wheat Malt *** 181g

Hops - AA% - IBUs - Weight (g or oz) at Minutes

Hop 1: Northern Brewer - 9% - 34.2 - 36g - 60 min
Hop 2: Cascade - 7.6% - 2.4 -9g - 10 min
Hop 3:Citra - 13.8% - 3.6 - 7g - 10 min
Hop 4:Cascade - 7.6% - 0 - 11g - 0 min
Hop 5: Citra - 13.8% - 0 - 10g - 0 min

The bittering hops used (Northern Brewer)were a 1/2 pack I had in stock you could use cascade or Citra if you want.

Boil is done, steeping hops are in.


Not smelling like i expected so far... Does the citrus come out in the ferment more?

lol.

Ended up with 21 litres at the correct gravity. So i recon it's gona be about 44 IBU not the 41 as expected.

Close enough for me.


Next question is going to be - Do i dry hop or not..... I'll ferment it out and then decide :)

I've never dry hopped mine in 3-4 brews and its always been great. Something to try for my next one i reckon though, think it could add something to this brew.

You won't need to dry hop I wouldn't think, you should have enough there. Might be worth a look at the dry hopping thread in the Brewniversity forum though. I'm gonna try hop puree at some point...

I brewed an all cascade pale ale earlier in the year and dry hopped in the fermenter after the beer was close to FG, the result was stunning, can;t recommend it enough.

I'll give it a taste after the ferment and decide then.

I had a cheaky sniff this morning now the ferment has started (3/4 inch high head after 12 hours!). The fruits are coming through. :)
