Hi there,
In a bit of a brewing spree at the moment. Looking at a cloning Brewdog Punk IPA, there are a lot of threads about this but many seem incomplete or refer to the 6% rather than the 5.6% version. Looking for the fruitiness which seems to offset much of the bitterness and makes it popular amongst friends who don't normally like such bitter beer.
The Brewdog website lists it as 45 IBU with Chinook, Simcoe, Ahtanum, Nelson Sauvin. Is the Chinook just for bittering? As have replaced it with Columbus as that is what I have. Also Amarillo seems to be recommended as a substitute for the Ahtanum which Brewdog have bought up, thoughts on this and the hop schedule? Going for a 60 minute boil but only hopping from 30 min onwards.
My other question is regarding the OG which they list as 1053, low for the 5.6%, I presume that to achieve this I need to mash at a lower temperature, 64C? Also a small amount of sugar which should dry it out. Once again, thoughts?

boil 10 mins 10g Amarillo leaf 7.0
boil 10 mins 10g Nelson Sauvin leaf 12.0
boil 10 mins 10g Simcoe leaf 13.0
boil 1 min 20g Amarillo leaf 7.0
boil 1 min 20g Nelson Sauvin leaf 12.0
boil 1 min 20g Simcoe leaf 13.0
dry hop 7 days 20g Amarillo leaf 7.0
dry hop 7 days 30g Nelson Sauvin leaf 12.0

The US-05 is probably a good choice, but I heard an interview Martin Dickie on Brewing Network and he revealed that they use a dry English ale yeast in most of their beers. Not that it will make a difference.
One thing though, use a much lower crystal than 60L. I think Brewdog use only Maris Otter in that beer.
BYO magazine did a clone of this beer, you might try googling for it.

Think I'm going to cut the crystal out together. Any feedback on the hopping schedule?

Looks good to me. Nice mix of "dank" and "fruity". Looks like a lot of dry hops though. You might cut back a little on it. It'll be a matter of trial and error but it looks like a delicious beer, regardless of whether it tastes like Punk or not.
For a 5.6% ABV I wouldn't bother with the cane sugar.

Where id you get their OG from? it is highly possible they have a strain of yeast which attenuates very very well.

they mention biscuit malt in the description and just extra pale malt further down? so maybe there not so forth coming with there recipes?

Yeah, last time i had this i seem to recall that it isn't that light, so im guessing they aren't being too forth coming with the malt base. I'd say there is probably a hint of biscuit malt, not much but enough to darken it slightly. Especially if they're using extra pale MO.
Hope schedule looks good to me though if you're going to dry hop I would go with 6g per litre and go for less than 7 days. The most volatile aroma oils depart quickest, at 7 days they'll have all left and you'll start getting the vegetable/plant floral taste out which isn't what you want. US-05 is a pretty good yeast choice though and I was well impressed with its results when i used it. As suggested though, for something like this I would want to use something like WP0001 (california ale yeast) as that will most likely give you much better hop notes and aromas. Just a thought

I had a punk IPA for the first time last night and was shocked how beautiful an ale it is; really really fruity/hoppy taste. Tempted to have go at your recipe at some point...

Just to clarify, US-05 and wlp001 Cal ale yeast are the effectivly the same thing.
I prefer the dried version for ease of use, but like someone said before the hops will dominate so yeast wont have much effect.
