I have just realised that my stocks are in danger of becoming very depleted so I need to get a quick brew on that I can be sure of bottling within the next two weeks. I have some Wai-iti hops on the way from Maltmiller and have put the following together....
Wai-Iti Pale (Blonde Ale)
Original Gravity (OG): 1.049 (°P): 12.1
Final Gravity (FG): 1.012 (°P): 3.1
Alcohol (ABV): 4.81 %
Colour (SRM): 3.8 (EBC): 7.4
Bitterness (IBU): 25.8 (Average)
88.8% Pale Malt
4.67% Caragold (Crisp)
3.73% Carapils (Dextrine)
2.8% Torrified Wheat
40g Riwaka (5.4% Alpha) @ 60 Minutes (Boil)
25g Wai-Iti (4.5% Alpha) @ 10 Minutes (Boil)
75g Wai-Iti (4.5% Alpha) @ 0 Minutes (Aroma)
Single step Infusion at 66°C for 60 Minutes. Boil for 60 Minutes
Fermented at 18°C with Safeale S-04

Not very sexy brew I know but I need to keep it simple and end up with something summery...
Any suggestions for improvements appreciated as always.

I've stated doing a protein rest at 40 c for 30min with my IPA s with notable success...I'm also a naive fan of 05 for a crisp flavour.but kind good loads of finishing hops.

Hey jimp - I love Wai-iti hops. Marstons did a single hop brew with them earlier in the year. I couldn't get enough of it. Should go well with Riwaka too. Let us know how it turns out.

Hey Alix - what have you found that the protein rest does for your IPAs? Have you brewed the same recipe with and without that step to see a measureable difference? If its worth doing I would certainly consider it.
CestrIan - I have never tried the wai-iti before but the description sounded great so thought I would give it a go. Maltmiller and a few of the other suppliers have a few of this year's new NZ hops in already, I was tempted by the Dr Rudi but thought I would wait til next time...

Wai iti are great! I could really taste the manderine. Never tried Dr Rudi either - another one to tick off the list.

Just felt this might need a bit of a malt boost so I subbed some munich that I had kicking around for some of the pale malt....

Brewed this yesterday eveningand missed the OG by only one point which was good but lost a litre somewhere which was not so good. There was a nice creamy white krausen rising in the FV this morning about 8 hours after pitching the yeast.
I meant to take some photos of the brewday but only remembered when running the wort into the FV....

Took a sample of this today and it has finished up on target at 1.013.
I took a larger sample than usual to have with lunch as I had a good feeling about it and I am not disappointed.
It is a lovely golden colour, still a little bit cloudy but nothing a few days crash cooling and then bottle conditioning won't sort out. The aroma - its all passion fruit and sweet orange. The taste - well balanced with the fruits coming through initially as sweet citrus then followed by mild bitterness and then grainy malt (glad I added the munich malt!) then the fruits come back and linger.
Really, really nice! I am not going to carbonated this one too much so will probably go with 60g of sugar for the batch in a few days time.
