So I have my summer hefe (that some people tell me isn't a hefe :mrgreen:) which I was gonna brew this week, but one of my main suppers has just got back from Italy and has become rather fond of Dunkelweizens. Given that I have some WLP300 on a stir plate I thought feck it, I'll do one of those instead and use the other grain next time. So here is what I plan to brew for a Dunkelweizen, with a frig load of wheat. Let's see if I get my first ever stuck mash eh boys:

Why would you want to put protafloc in there, the beer is supposed to be cloudy so I would avoid anything that would tend to make it clear. I also think that the yeast nutrient is not needed, WLP300 is some wild stuff and I have yet to have problems with it doing the job. Actually, I underpitch on purpose so that I get the maximum ester and phenol production possible.

By the way, our German buddies max out at around 70% wheat malt and 50% is the legal minium by law over in the Fatherland. I would chuck in a fair amount of Munich malt for a Dunkelweizen and maybe even a touch of Melonodin malt, it will make the beer maltier, think a wheat version of a Munich Dunkel. If you get to 100% wheat like that I can almost guarantee that you will end up with a stuck mash, in fact I use about a pound of rice hulls just to keep that from happening. I would also do a double decoction but then I'm a crazy yank, what can I say?

Hmm, fresh from the other recipe I have 710g of Munich and around 2kg of Pilsner. Swapping out the wheat for the munich would reduce the percentage a bit. What do you think?

Do it, you won't be sorry. The maximum amount of wheat malt I use is 70%, you can go lower without a problem.

That amount of wheat is craziness. Curious how the mash goes and the flavor improvement. May need a decoction or 2 to breakdown the wheat some and help with sparging.

Decoction, gah. I have a Ritchies mashing and sparging bag, I may somehow line the bottom of my MT with that as some kind of anti-stick aid. But you reckon I'll have trouble extracting the sugars? The maltmiller page for the weyermann malt I bought here: http://www.themaltmiller.co.uk/index.ph ... ductId=255 says that it can comprise 80% of the grist... so surely my above post where I throw in the munich will be fine ;-)

You going to do a brew in a bag (BIAB)? It will probably convert just fine with the munich, which I take they are referring to on the website. Just never heard the results of a recipe with that much wheat.

No, a standard coolbox/manifold jobby, just thinking put the bag in the bottom to cover the manifold if its as bad as everyone says...

Last weekend brewed dunkelweizen with 65% wheat and 35% barley, had no problems with filtration. Once I had 70% wheat, again with no problems. If in doubt put some rice or buckwheat hulls into mash before sparging.

Ok, the recipe now is:

71.3% Weyermann German Wheat Malt
14.4% German Munich Malt
10.2% German CaraPils
4.1% German Carafa II

Hopped to 12.4IBU with 30g of 3.8% Czech Saaz for the whole 90 minute boil

Water adjusted to GW 'General Purpose' profile

No whirlfloc or servomyces

WLP300 built from a starter on a stir plate
