Enzymes should be fine with that one - Lintner value looks ok , well based upon my set up anyway. Wheat malt readily converts.
I haven't had a stuck mash with wheat malt, tends to be more with unmalted wheat. Run off on the slow side I do though.
One idea I would possibly mash with soft water profile - lager profile, without the carafa in the mash and steep that in the copper as you come up to temp. I have a feeling you will get a different mouthfeel with a harder water profile even if you get to the right ph in the mash.

Too late now, the mash is on, but its funny - I was going to do a lager profile but then after a lot of googling saw that the profile varies wildly in this style and its just down to the brewer. So I went middle of the road. Hopefully the Carafa won't impart something I am not looking for!

Last month I had a dunkleweizen at a beer fest that was really good and e-mailed the brewer to ask about the yeast. He wrote back with information about the grains also. He used munich, wheat and, caramel 60.
I'm just here for the beer.

Thinking of doing a Dunkel on the cake of a Hefeweizen yeast (WLP380) next weekend?

Hmm, it turned into some kind of milkshake in the keg. Need to fix at some point assuming its not gone off, lol. The epic BBQ of drinking infinite beer came and went, fortunately the IPA went down a treat!
