My Wedding Brews - Recipes and Labels

I'm getting married at the end of July and will, of course, be brewing up a storm for it. I'm doing 4 in total. I used http://www.beerlabelizer.com/ to create the labels then tweaked them using various different programs. Pretty basic designs, but they'll do.

First up is something light:

Yankee Doodle

Recipe:

Size: 30.0 L
Efficiency: 80.0%
Attenuation: 81.0%

Original Gravity: 1.039 (1.000 - 1.100)
Terminal Gravity: 1.007 (1.000 - 1.100)
Alcohol: 4.07%
Bitterness: 30.3

Ingredients:
4.2 kg Maris Otter Pale Ale Malt
600.0 g CaraMalt MM
70 g Carafa Special® TYPE III
120.0 g Torrified Wheat
52.0 g Cascade (7%) - added during boil, boiled 90 m
60 g Cascade (7.6%) - steeped after boil
Fermentis US-05 Safale US-05

Next is my house IPA recipe. I usually brew it to around 5.7% but toned it down just this once...

Triple Dropped IPA

Recipe:

Size: 29.0 L
Efficiency: 86.0%
Attenuation: 81.0%

Original Gravity: 1.047 (1.050 - 1.075)
Terminal Gravity: 1.009 (1.010 - 1.018)
Color: 14.6 (8.0 - 14.0)
Alcohol: 5.0% (5.0% - 7.5%)
Bitterness: 68.1 (40.0 - 60.0)

Ingredients:
4.8 kg Maris Otter Pale Ale Malt WHS
480 g CaraMalt
100 g Torrified Wheat
68.46 g Cascade (7%) - added first wort, boiled 90 m
50.44 g Bobek - TTS (6.17%) - added first wort, boiled 90 m
56.0 g Bobek - TTS (6.17%) - steeped after boil
153.44 g Cascade (6.8%) - steeped after boil
Fermentis US-05 Safale US-05

Recipe:

Size: 25.0 L
Efficiency: 81.0%
Attenuation: 83.0%

Original Gravity: 1.048 (1.026 - 1.120)
Terminal Gravity: 1.008 (0.995 - 1.035)
Color: 21.6 (1.0 - 50.0)
Alcohol: 5.19% (2.5% - 14.5%)
Bitterness: 30.2 (0.0 - 100.0)

Ingredients:
3.8 kg Maris Otter Pale Ale Malt
300 g British Crystal 55°L
200 g CaraMalt MM
100 g Torrified Wheat
49 g Bobek (6.17%) - added during boil, boiled 90 m
35 g Crushed Coriander - added during boil, boiled 1 m
80 g Orange Zest - steeped after boil
20.0 g Bobek (6.17%) - steeped after boil
450 g Rowse Honey
WLP002

New Zealand Red Ale

Recipe:

Size: 25.0 L
Efficiency: 77.0%
Attenuation: 81.0%

Original Gravity: 1.051 (1.026 - 1.120)
Terminal Gravity: 1.010 (0.995 - 1.035)
Color: 33.9 (1.0 - 50.0)
Alcohol: 5.39% (2.5% - 14.5%)
Bitterness: 44.8 (0.0 - 100.0)

Ingredients:
4.9 kg Maris Otter Pale Ale Malt WHS
540 g CaraMalt
130 g Carafa Special® TYPE III
108 g Torrified Wheat
23.0 g Pacific Jade (15.1%) - added during boil, boiled 90 m
8.0 g Nelson Sauvin (12.6%) - added during boil, boiled 90 m
77.0 g Pacific Jade (15.1%) - steeped after boil
92.0 g Nelson Sauvin (12.6%) - steeped after boil
Fermentis US-05 Safale US-05

The IPA and NZ Red are fermenting away nicely. Will get the WLP002 starter rocking tonight from slant and will brew it next wknd. Roll on the big day!!

Nice one Floyd! Great to see you pulling out the stops for the big day. Makes all the difference I reckon; weddings can be very hit and miss. We found that putting thought into the day really shone through and I'm sure people will notice your efforts. Or they'll be too lashed to care!
We arranged for our caterers to intercept 100 bottles of Summer Lightning at Barelona and ship then to Gran Canaria. Went down a storm and worth every euro.

Summer Lightning in Gran Canaria? Result! I know what you mean about thought and care. It's the little touches that make the difference I reckon.

Have the WLP002 starter on the go for the Honey Zest. Actually tempted to start brewing the Yankee Doodle now... missus is on her hen do so nothing's stopping me!

Yeah, thanks! Getting them was pretty straight forward, actually.
I called Hop Back and asked if they shipped to Spain, which they did- Barcelona. I then asked the caterers if they could collect from Barcelona. Hop Back are really helpful people; I can't sing their praises high enough.
The trickiest bit was getting the waiters to leave the sediment in the bottom, then to stop them throwing half full bottles away cos they were using half glasses. There were plenty of thirsty Brits to put them right, mind!
Did you make the most of the hen do? Time like that has become gold to me now!

Haha. I did actually... I went drinking! Planned to do the Yankee Mild but lost motivation after a few beers here at home. I'm going to brew the last two next wknd. The NZ red and IPA are both smelling and tasting great already. Sweeeeeeeeeet!

4 beers by the end of July you must have quite a few FV's and great temp control! Will you bottle all of these, in which case I wouldn't want to be bottling that lot, you will be a busy boy. Leave something for the Wedding night won't you :wink:

I have no temp control. Luckily the room has stayed at a constant 18c-20c throughout so far. I'm mini kegging them. Shouldn't take long. Will have a shit load of kegs after it though! Maybe I'll sell them on...

Meant to ask, Floyd - Were there any favourites at this wedding of yours? I can imagine the IPA running out first. Perhaps you were too busy to notice!
